Time 30m

Yield 4

Number Of Ingredients 16

1 (5 ounce) can tuna, drained
1 egg
½ cup Italian seasoned bread crumbs
⅓ cup minced onion
¼ cup minced celery
¼ cup minced red bell pepper
¼ cup mayonnaise
2 tablespoons chili sauce
½ teaspoon dried dill weed
¼ teaspoon salt
⅛ teaspoon ground black pepper
1 dash hot pepper sauce
1 dash Worcestershire sauce
4 hamburger buns
1 tomato, sliced
4 leaves of lettuce

Steps:

  • Combine tuna, egg, bread crumbs, onion, celery, red bell pepper, mayonnaise, hot chili sauce, chili sauce, dill, salt, pepper, hot pepper sauce and Worcestershire sauce. Mix well. Shape into 4 patties (mixture will be very soft and delicate). Refrigerate for 30 minutes to make the patties easier to handle, if desired.
  • Coat a non-stick skillet with cooking spray; fry tuna patties for about 3 to 4 minutes per side, or until cooked through. These are fragile, so be careful when turning them.
  • Serve on buns with tomato slices and lettuce leaves, if desired.

Tapenade:
1 cup pitted Kalamata olives (about 5 ounces)
3 tablespoons extra-virgin olive oil
2 tablespoons chopped shallot
2 tablespoons chopped fresh mint
2 teaspoons chopped fresh thyme
2 teaspoons fresh lemon juice
Burgers:
2 pounds chilled fresh tuna steaks, finely diced
2 tablespoons chopped drained capers
2 tablespoons chopped shallot
1 tablespoon Dijon mustard
1 teaspoon minced fresh thyme
1 teaspoon freshly ground black pepper
3/4 teaspoon coarse kosher salt
Nonstick vegetable oil spray
12 4-inch squares herb focaccia, or six 4-inch squares pain rustique, halved horizontally, lightly grilled
1 large heirloom tomato, cut into 6 slices
6 thin slices red onion
2 cups baby arugula (about 3 ounces)

Steps:

  • For tapenade:
  • Blend all ingredients in mini processor to coarse puree. Season tapenade to taste with salt and pepper. Transfer to small bowl. DO AHEAD: Can be made 3 days ahead. Cover and chill.
  • For burgers:
  • Gently mix diced tuna and next 6 ingredients in large bowl. Using moistened hands, shape tuna mixture into six 3/4-inch-thick patties (each about 4 inches in diameter). Place burgers on plate. Cover and refrigerate at least 1 hour and up to 1 day.
  • Spray grill rack with nonstick spray. Prepare barbecue (medium-high heat). Grill burgers until almost cooked through, about 4 minutes per side. Arrange 6 focaccia squares or bottoms of pain rustique on work surface; spread with tapenade. Top each with burger, tomato slice, onion slice, and arugula, then focaccia or bread top. Cut burgers in half and serve.

Yield Makes 4

Number Of Ingredients 17

Remoulade sauce
1/2 cup mayonnaise
1 tablespoon fresh lemon juice
1 garlic clove, pressed
1 teaspoon (packed) minced fresh Italian parsley
1 teaspoon grated onion
1 teaspoon anchovy paste
2 hard-boiled large egg yolks
1/4 cup extra-virgin olive oil
2 tablespoons drained capers
Burgers
1/4 cup olive oil
2 tablespoons tarragon vinegar
2 small bay leaves, broken
4 6-ounce ahi tuna steaks (each about 1 inch thick)
Nonstick vegetable oil spray
4 4-inch square crusty artisanal rolls or squares of focaccia, split horizontally

Steps:

  • For sauce:
  • Whisk first 6 ingredients in bowl to blend. Using fine grater, grate in egg yolks. Whisk in oil, then capers. Season with salt and pepper.
  • Do ahead: Can be made 1 day ahead. Cover and chill.
  • For burgers:
  • Combine oil, vinegar, and bay leaves in large heavy-duty resealable plastic bag. Shake to blend. Add tuna. Seal bag; turn to coat. Chill at least 1 hour and up to 2 hours, turning bag occasionally.
  • Spray grill rack with nonstick spray and prepare barbecue (medium-high heat). Brush cut sides of rolls with some of tuna marinade. Grill rolls, cut side down, until golden, about 2 minutes. Transfer rolls to work surface. Grill tuna, with some marinade still clinging, until slightly charred but still pink in center, about 2 1/2 minutes per side.
  • Place tuna on roll bottoms. Top with dollop of sauce, then roll tops. Serve, passing remaining sauce separately.

Tips:

  • Choose high-quality tuna steaks. Look for steaks that are thick, firm, and have a deep red color. Avoid steaks that are thin, mushy, or have a grayish color.
  • Use fresh herbs and spices. Fresh herbs and spices will give your tuna burgers the best flavor. If you don't have fresh herbs on hand, you can use dried herbs, but be sure to use less, as they are more concentrated.
  • Don't overcook the tuna burgers. Tuna burgers are best when they are cooked rare or medium-rare. Overcooked tuna burgers will be dry and tough.
  • Serve the tuna burgers with your favorite toppings. Some popular toppings include lettuce, tomato, onion, cheese, and avocado. You can also serve the tuna burgers with a dipping sauce, such as spicy mayo or tartar sauce.

Conclusion:

Grilled tuna burgers are a delicious and healthy alternative to traditional beef burgers. They are easy to make and can be cooked in under 30 minutes. With their light and flaky texture and flavorful taste, tuna burgers are sure to be a hit with your family and friends. So next time you're looking for a quick and easy meal, give grilled tuna burgers a try!
