From a community cookbook. Don't want to lose this recipe. I just bought ground turkey and this sounds different with the raw cous cous mixed in with onion, Dijon, soy sauce, lemon juice, tomato paste, apple juice, white pepper, garlic, red pepper sauce and egg white. Who thought of that?

1 lb ground turkey
1/2 cup couscous, uncooked
3 tablespoons onions, chopped
3 tablespoons Dijon mustard, no salt
1 tablespoon soy sauce
1 tablespoon lemon juice
3 tablespoons tomato paste
1 teaspoon apple juice
1/4 teaspoon white pepper
1/4 teaspoon garlic powder
1 dash red pepper sauce
1 egg white

Steps:

  • Mix all ingredients together in a large bowl.
  • Form into patties.
  • Cook on grill until cooked through.

1 or 2 jalapeño chiles, seeded, chopped
1 cup diced Monterey Jack cheese with jalapeño chile peppers
3/4 teaspoon pepper
1 1/2 cups Old El Paso™ Thick 'n Chunky salsa
12 hamburger buns, split, toasted
12 slices tomato
Additional Old El Paso™ Thick 'n Chunky salsa, if desired

Steps:

  • Heat gas or charcoal grill. In large bowl, mix turkey, chiles, cheese, pepper and 1 1/2 cups salsa. Shape mixture into 12 patties, each about 3/4 inch thick.
  • Place patties on grill. Cover grill; cook over medium heat 12 to 15 minutes, turning once, until thermometer inserted in center of patties reads 165°F.
  • Serve burgers on buns with tomato slices and additional salsa.

Grey Poupon (8 oz)

vinegar (1 cup)
Kosher Salt (1/2 cup)
Hamburger Rolls (5-6)

Steps:

  • 1. Make Pickle: Mix vinegar (1 cup) & Kosher Salt (1/2 cup). Stir until salt is dissolved. Slice cucumbers and let soak in vinegar solution for about 1 hour. 2. Make Apricot Dijon: Apricot Jam (8 oz) Grey Poupon (8 oz). Best if done in blender but not necessary. 3. Make Burgers: mix Ground Turkey (1 lb) Arugula (4 cups chopped) Garlic (4 cloves Minced) Olive Oil (2 Tbls) Montreal Steak Seasoning (dash). Form into 5-6 patties. 4. 4 ounces crumbled blue cheese
6 onion or plain burger buns, split and toasted
1 large red onion sliced, if desired

Steps:

  • Brush grill rack with vegetable oil. Heat coals or gas grill for direct heat.

2 T Dijon-style mustard
2 T Panko
2 T fat free milk
2 cloves garlic, minced
1 shallot, finely chopped
1 T snipped fresh basil
1/2 t salt
1/2 t black pepper
1 lb uncooked ground turkey breast
1 pint assorted cherry tomatoes
2 4-inch squares focaccia or ciabatta, toasted
1 t lemon juice

Steps:

  • Soak 4 bamboo skewers for 30 minutes. Combine 1 T mustard, panko, milk, garlic, shallot, basil, s & p. Add turkey, mix and form into four 1/2-inch thick patties. Thread tomatoes on skewers and brush with olive oil Grill patties for 11 to 13 minutes until done (165 degrees F) Add tomato skewers for the last 6 minutes of grilling Spread the cut sides of toasted bread with remaining mustard. Place each burger on top. Remove tomatoes from skewers and pile on burgers. Drizzle with lemon juice and sprinkle with s & p and additional basil. 297 cal., 7 g fat, 55 mg chol, 821 mg sodium, 24 g carb, 2 g fiber, 33 g pro.
