Steps:
- Grilling Method: Indirect/Medium Heat
- Rinse fish and pat dry. Season with salt and pepper inside and out. Place fresh herbs inside cavity of fish. Lightly oil both sides of fish. Wrap seasoned, oiled fish with pancetta or bacon that is thinly sliced and unrolled. Wrap fish loosely, mummy-style, with the pancetta, leaving head and tail exposed.
- Place fish in center of cooking grate. Cook until opaque, but still moist in thickest part (10 to 15 minutes). Remove from grill.
- Place fish onto platter and serve immediately.
Tips:
- Choose fresh and firm trout: Look for trout that has bright, clear eyes, and firm flesh. Avoid fish that has a slimy or dull appearance.
- Clean the trout thoroughly: Remove the gills, entrails, and scales from the trout before stuffing and grilling.
- Stuff the trout with flavorful ingredients: Common stuffing ingredients include herbs, vegetables, breadcrumbs, nuts, and cheese. Be creative and experiment with different flavor combinations.
- Season the trout cavity: Sprinkle the inside of the trout cavity with salt, pepper, and other seasonings before stuffing.
- Wrap the trout in foil or parchment paper: This will help to keep the trout moist and prevent it from drying out during grilling.
- Grill the trout over medium heat: Cook the trout for about 10-12 minutes per side, or until the internal temperature reaches 145°F.
- Let the trout rest before serving: Allow the trout to rest for a few minutes before serving to allow the juices to redistribute.
