Yield Makes 4 servings

Number Of Ingredients 10

3 cloves garlic, roughly chopped
1 jalapeño, stemmed, seeded, and roughly chopped
4 scallions, white and green parts, chopped
One 7-ounce can chipotle chiles in adobo sauce
3 tablespoons roughly chopped fresh oregano
1 tablespoon kosher salt, plus more to taste
1 1/2 cups red wine vinegar
1 cup pure olive oil
4 pounds country pork ribs
Freshly ground black pepper to taste

Steps:

  • Combine the garlic, jalapeño, scallions, chipotles, oregano, and salt in a food processor and mix until relatively smooth. While the processor is running, gradually pour in the vinegar and then the oil. Transfer this marinade to a bowl.
  • Season the ribs with salt and pepper. Put them in a large resealable plastic bag, pour 2 cups of the marinade over them, and refrigerate overnight. Cover and refrigerate the remaining marinade.
  • Prepare a medium-hot fire in a grill.
  • Remove the ribs from the bag, shake off the excess marinade, and place on the grill. Grill for 15 to 20 minutes, basting with the reserved marinade and flipping them frequently so that they cook evenly. Serve.
  • Recommended wine: A red wine with ripe fruit and hints of spice and black pepper, such as a Malbec from Argentina or the Cahors region in France. Of course, the combination of barbecue and beer never misses.

GRILLED ZESTY LEMON SPARERIBS

Grilled Zesty Lemon Spareribs image

Mmm Mmm--grilled lip-smackin' lemony ribs made with meat, frozen lemonade and a favorite barbecue sauce!

Provided by Betty Crocker Kitchens

Categories     Entree

Time 6h30m

Yield 8

Number Of Ingredients 8

6 pounds pork spareribs, cut into serving pieces
1 cup ketchup
1/2 cup chili sauce
1/2 cup packed brown sugar
2 tablespoons cider vinegar
1 tablespoon lemon juice
1 tablespoon liquid smoke
1 can (6 ounces) frozen lemonade concentrate, thawed

Steps:

  • Place pork in 4-quart Dutch oven. Add enough water to cover pork. Heat to boiling; reduce heat to low. Cover and simmer about 1 hour 30 minutes or until tender.
  • Meanwhile, in 2-quart saucepan, heat ketchup, chili sauce, brown sugar, vinegar, lemon juice and liquid smoke to boiling; reduce heat. Simmer uncovered 10 minutes, stirring occasionally. Remove from heat; stir in lemonade concentrate. Set aside.
  • Remove pork to rectangular baking dish, 13x9x2 inches, or resealable food-storage plastic bag. Pour marinade over pork; turn pork to coat. Cover dish or seal bag and refrigerate, turning pork occasionally, at least 4 hours but no longer than 24 hours.

Tips:

  • Choose the right ribs: Country-style ribs are a great choice for this recipe because they are meaty and flavorful. You can also use baby back ribs or spare ribs, but adjust the cooking time accordingly.
  • Make sure the ribs are well-marinated: The marinade helps to tenderize the ribs and infuse them with flavor. Be sure to marinate the ribs for at least 4 hours, or overnight if you have time.
  • Cook the ribs over indirect heat: This will help to prevent them from drying out. If you are using a charcoal grill, place the ribs on the grate directly above the drip pan. If you are using a gas grill, turn off the burner directly under the ribs and place the ribs on the grate over that burner.
  • Baste the ribs frequently: This will help to keep them moist and prevent them from burning. Use a basting brush to apply the marinade or a mixture of melted butter and honey to the ribs every 30 minutes or so.
  • Cook the ribs until they are fall-off-the-bone tender: This will take about 2-3 hours, depending on the thickness of the ribs. To test if the ribs are done, insert a toothpick into the meat. If it slides in easily, the ribs are done.

Conclusion:

Grilled wine-marinated country-style ribs are a delicious and easy-to-make dish that is perfect for any occasion. The ribs are tender and flavorful, and the marinade gives them a slightly sweet and tangy taste. Serve the ribs with your favorite sides, such as mashed potatoes, coleslaw, or baked beans.
