1 cooking spray (such as Pam®)
3 pounds ground beef
2 cups coarsely chopped celery
1 cup coarsely chopped onion
1 pinch salt and ground black pepper to taste
2 (10.75 ounce) cans condensed cream of mushroom soup
1 (10.75 ounce) can condensed Cheddar cheese soup
1 large head cabbage, coarsely chopped
5 medium Yukon Gold potatoes, thinly sliced

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking pan and an 8-inch square or round pan with cooking spray.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef, celery, and onion in the hot skillet with salt and pepper until beef is browned and crumbly and vegetables are translucent, about 10 minutes. Add cream of mushroom and Cheddar cheese soups and mix well.
  • Layer cabbage into both of the prepared pans. Add 2 sliced potatoes to the 8-inch pan and remaining potatoes to the 9x13-inch pan. Spread around to cover. Spoon meat mixture over the potatoes and cabbage in both pans.
  • Bake, covered, in the preheated oven for 1 hour. Uncover and continue to bake for 15 minutes more.

cooking spray
1 (28 ounce) can fire-roasted diced tomatoes
2 pounds ground beef
1 medium onion, diced
2 (10.75 ounce) cans condensed tomato soup
1 medium head cabbage, cored and thinly sliced

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray a casserole dish with cooking spray.
  • Place diced tomatoes in a colander over a bowl. Let drain and retain the juice.
  • Meanwhile, heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer to a large bowl. Drain and discard most of the grease from the skillet.
  • Cook onions in the remaining grease over medium-low heat until the onion is soft and beginning caramelize, about 15 minutes. Remove from the heat and add to the beef with drained tomatoes and condensed soup. Add some tomato juice if necessary to thin the mixture slightly.
  • Place the cabbage in the prepared casserole dish, mounding it in the middle. Pour beef mixture over top and cover tightly with foil.
  • Bake in the oven for 1 hour. Remove the foil and bake for 1 more hour. Remove from the oven and allow to cool for 20 minutes or so before serving. Serve hot.

This is a simple, delicious casserole to put together. I have made this using ground beef and tomato sauce, or with a seasoned ground pork sausage and along with a traditional style spaghetti sauce. No matter how it's made, both taste great! The seasoned pork sausage I used, already had salt, course cracked pepper, dried sage, onion and fresh garlic added to it. Have also made this using a lb. of leftover (already-cooked) taco seasoned meat, which gave this dish lots of flavor.

1 lb ground beef
1 medium onion, diced
2 garlic cloves, minced
salt & pepper, season according to taste
1/4 teaspoon crushed red pepper flakes
2 (8 ounce) cans tomato sauce
4 cups shredded cabbage
3 tablespoons Kraft® Grated Parmesan Cheese

Steps:

  • In a skillet, brown the ground beef; drain off the excess grease.
  • Add beef back to the skillet, then add the onion, garlic, salt & pepper, and the red pepper flakes.
  • Add the tomato sauce, stir and heat the tomato/beef mixture, over low heat.
  • At this point, set the oven temp to 350 degrees.
  • Spray the inside of a 2-1/2 quart casserole baking dish, with a no-stick cooking spray.
  • Add 2 cups of the shredded cabbage to the casserole baking dish.
  • Add half of the tomato/beef mixture, over the shredded cabbage.
  • Repeat layer of cabbage and tomato/beef mixture.
  • Sprinkle casserole with the parmesan cheese.

If you love cabbage as much as I do you will enjoy this quick dish. I sometimes omit the spaghetti sauce and mozzarella cheese. Instead I season the ground beef with Chinese Five Spice and then you have a different casserole.

1 large head cabbage
1 lb lean ground beef
1 small to medium onion, minced
1 jar(s) 32 oz. more or less spaghetti sauce
1 c water
1/3 c rice, long grain
1 pkg 8 oz. mozzarella cheese, shredded
3/4 Tbsp salt and 1 tsp. pepper
FOR THE ASIAN CASSEROLE, OMIT THE SPAGHETTI SAUCE AND MOZZARELLA CHEESE
ADD 1/2 TO 1 TSP. CHINESE FIVE SPICE TO GROUND BEEF WHILE COOKING AND FOLLOW SAME DIRECTIONS.

Steps:

  • 1. Cook cabbage in salted water, stirring gently occasionally. When done drain well.
  • 2. While cabbage is cooking, prepare meat sauce in skillet over medium high heat cook ground beef, onion and pepper. When done drain the fat off.
  • 3. To the meat add spaghetti sauce, water and rice; heat to boiling. Reduce heat to low, cover and simmer until rice is tender, stir ocassionally. While meat sauce is cooking preheat oven to 350*.
  • 4. Use a 13 x 9 baking dish, spoon 1/2 cup meat sauce over the bottom, then top with 1/2 of cabbage, then 1/2 remaining meat sauce and 1/2 shredded cheese. Repeat layers. Bake 25 minutes or until complete hot and cheese is melted.
  • 5. Note: If using the Chinese Five Spice, simply stir or layer meat and rice mixture and proceed with the layers or sometimes I just stir the cabbabe and meat together and then heat till hot in the oven.

1 medium chopped onion in
3 T Butter
Add and Brown:
1 pound ground beef

Shred:
3 cups cabbage
Mix:
1 can tomato soup with 1 can water in bowl
