1/4 cup reduced-sodium soy sauce
2 tablespoons lemon juice
2 pounds grouper or red snapper fillets
1 medium onion, cut into 6 wedges and separated
3 teaspoons olive oil, divided
1 medium green pepper, sliced into thin rings
1 medium sweet red pepper, sliced into thin rings
1 medium sweet yellow pepper, sliced into thin rings
1 can (14-1/2 ounces) diced tomatoes, drained

Steps:

  • In a small bowl, combine soy sauce and lemon juice. Pour 1/4 cup marinade in a shallow dish; add fish. Turn to coat; cover and refrigerate for 20 minutes. 3 cloves garlic, minced
3 cups chopped Roma tomatoes
2 tablespoons red wine vinegar
1 teaspoon agave nectar
¼ cup capers, drained
4 tablespoons snipped fresh parsley
