GLUTEN-FREE OATMEAL COOKIES

Gluten-Free Oatmeal Cookies image

Unlike many other oatmeal cookie recipes with refined sugars and flours, you won't find any of that nonsense here. Just old-fashioned oats, maple syrup, and loads of fiber. Oh yeah, and dark chocolate chips, which by the way are little antioxidant powerhouses. Scrumptious and entirely guilt free! Adding gluten-free brewer's yeast to this recipe makes for a great, nutrient-dense lactation cookie for new, nursing moms. Omit for a more classic oatmeal cookie. Store in an airtight container at room temperature, or freeze.

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter your cookies will be. You can also use overripe bananas, as they will be easier to mash.
  • Don't overmix the batter: Overmixing the batter will make the cookies tough. Mix just until the ingredients are combined.
  • Chill the dough before baking: Chilling the dough will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies at a high temperature: Baking the cookies at a high temperature will help them rise and get crispy on the edges.
  • Let the cookies cool completely before eating: Letting the cookies cool completely will help them set and firm up.
