1 1/2 cups whole wheat flour
1/3 cup oats, and extra 1 tablespoon for topping bread
2/3 cup dark brown sugar
1/8 teaspoon salt
4 teaspoons baking powder
12 ounce Guinness Draft

Steps:

  • Preheat oven to 350 degrees.
  • Grease a loaf pan with butter and put aside.
  • In a large bowl, whisk together dry ingredients: flours, oats, baking powder, salt, brown sugar, and form a well.
  • Slowly pour in the Guinness in to the middle and mix all ingredients together with a wooden spoon. Don't overwork the mixture, but make sure the flour is all moistened.
  • Pour batter into prepared loaf pan and sprinkle the top with 1 tablespoon of oats.
  • Bake for 40-50 minutes or until a toothpick inserted in the middle of the loaf comes out clean.

1 cup quick-cooking oats (not instant), such as McCann's, plus extra for sprinkling
2 1/4 cups whole wheat flour, such as Heckers
1/4 cup all-purpose flour
1/2 cup dark brown sugar, lightly packed
2 1/4 teaspoons baking soda
1 teaspoon baking powder
2 teaspoons kosher salt
1 (11- to 12-ounce) bottle Guinness extra stout beer, at room temperature
1 cup buttermilk, shaken
5 tablespoons unsalted butter, melted, plus extra for brushing the pan
1 teaspoon pure vanilla extract
Salted butter, such as Irish Kerrygold

Steps:

  • Preheat the oven to 450 degrees.
  • In a large bowl, combine the oats, whole wheat flour, all-purpose flour, brown sugar, baking soda, baking powder, and salt. In a separate bowl, whisk together the beer, buttermilk, melted butter, and vanilla. Make a well in the dry ingredients and pour the wet ingredients into the well. With your fingers, stir the batter from the middle of the bowl to the outside, until it's well mixed. It will look more like cake batter than bread dough.
  • Brush a 9 x 5 x 2 1/2-inch loaf pan with melted butter. Pour the batter into the pan and sprinkle the top with oats. Put the bread in the oven, immediately turn the temperature down to 400 degrees, and bake for 45 minutes, until a toothpick comes out clean. Turn the bread out onto a baking rack and allow to cool completely. Slice and serve with salted butter.

5 1/2 cups all-purpose flour (plain, wholemeal)
1 1/4 cups all-purpose flour (plain, white)
1/2 cup oatmeal
2 1/2 teaspoons bread soda
2 1/2 tablespoons brown sugar
1/4 cup unsalted butter
2 cups milk
3/4 cups black treacle (molasses)
1/2 pint draught Guinness (see note)

Steps:

  • Place all the dry ingredients into a large mixing bowl.
  • Add the butter and rub into the dry ingredients until it resembles fine breadcrumbs - I recommend working quickly as the mixture can easily become greasy if over mixed, or mixed using too warm hands.
  • Add the milk, black treacle molasses, and the Guinness.
  • Mix to create a wet dough.
  • Grease a standard loaf tin, add the wet dough and bake in the oven for 40 - 45 mins or until the bread is well risen and thoroughly cooked.
  • Leave for 10 minutes in the tin, then turn out onto a wire rack to cool.
  • Eat while slightly warm if you like, or allow to go completely cold. Delicious with salty butty and Irish smoked salmon, cold meats or cheeses. The recipe comes courtesy of the home of Guinness, the Guinness Storehouse in Dublin, Ireland. The storehouse was a fermentation plant for 84 years but is now a 7-story visitor center.
