SOUTHERN CALIFORNIA HALIBUT WITH LEMON, OLIVE OIL, SWEET BELL PEPPER AND ANCHOVY

Southern California Halibut with Lemon, Olive Oil, Sweet Bell Pepper and Anchovy image

Provided by Food Network

Number Of Ingredients 16

4 (6 ounce) portions halibut
2 roasted red bell pepper
2 roasted yellow bell pepper
2 tablespoons rinsed capers
1/4 cup pitted green olives
2 fennel bulbs
1garlic clove
4 fillets good quality anchovies
Juice and zest of 2 lemons
Sherry vinegar
1/2 cup quality olive oil
1 bunch green basil
1 bunch opal basil
1 bunch dry fennel
Oil for frying
Salt and pepper, to taste

Steps:

  • Begin by filleting, skinning, and portioning the halibut. Next roast the peppers and peel. Think about using a blow torch, if available, to burn the skin off as it does it quickly helps maintain the texture of the pepper. Once the peppers are peeled cut them into a small dice. Add the peppers to a clean mixing bowl and start with the rest of the ingredients. After rising the capers well, chop them finely and add them to the bowl. Chop the olives and do the same. Finely dice the fennel, blanch it in acidulated water, shock it in ice water, and add it to the bowl. Finely chop the garlic and the anchovy and add them to the bowl as well. Season the mixture with ground pepper; add the juice of the remaining lemon and zest as well. Add a few drops of the sherry vinegar, if desired, and add the olive oil. At this point taste the mixture and if it needs salt use the finest sea salt you can find. Set the mixture aside in a warm place while you cook the fish. Place the frying oil in a tall straight-sided pan and heat to 300 degrees. At this point add a few leaves of the green basil and fry until crisp. Season the leaves with salt and set aside for service. To begin cooking the fish add a bit of cooking oil to a saute pan and bring the oil to the smoke point. When the pan reaches the correct temperature, add the fillets of fish and begin to cook. As the fish begins to color you will see the sides begin to opaque, this is a sign that it is nearly cooked. At this point turn the fish over for about 30 seconds, remove the fish from the pan and place on absorbent paper to remove any excess oil. Before plating tear a few of the basil leaves roughly and add them to the olive mixture. Taste one final time before plating, adjust seasoning if necessary. To begin plating, place a bit of the olive mixture in the center of the warmed dinner plates, be sure to have enough olive oil on each plate so that a bit of the oil surrounds the salad. Place a fillet of halibut on top and place the fried basil leaves, opal basil on top of the fish for garnish, and sprinkle with dried fennel.

PAN-SEARED HALIBUT WITH CITRUS SALSA

Pan-Seared Halibut with Citrus Salsa image

Provided by Kelsey Nixon

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 10

1 blood orange
1 tangerine
1 cup diced avocado
1/3 cup finely diced red onion
2 tablespoons chopped fresh cilantro
1/2 teaspoon finely grated lime zest
2 tablespoons fresh lime juice
Kosher salt and cracked black pepper
1 to 2 tablespoons olive oil
Four 6-ounce halibut fillets

Steps:

  • Using a paring knife, remove the peel and white pith from the orange and tangerine. Working over a large bowl, carefully cut between the membranes to release the citrus segments, allowing them to fall into the bowl along with any juices. Add the avocado, onions, cilantro and lime zest and juice to the bowl with the citrus. Gently toss to mix. Season the salsa with salt and pepper.
  • In a large nonstick skillet, heat the oil over medium-high heat. Sprinkle the halibut liberally with salt and pepper. Add the halibut to the skillet and cook until golden brown and cooked through, 3 to 5 minutes per side. Transfer the halibut to serving plates, top with salsa and serve.

HALIBUT WITH LEMON-BUTTER AND CRISPY SHALLOTS

Halibut with Lemon-Butter and Crispy Shallots image

Provided by Giada De Laurentiis

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 14

1 tablespoon fresh lemon juice
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Zest of 1 large lemon
1/2 stick unsalted butter, at room temperature
1/4 cup extra-virgin olive oil
2 tablespoons fresh lemon juice
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 large cloves garlic, smashed
4 halibut fillets (each 4 to 5 ounces)
1/2 cup grapeseed oil
2 large shallots, cut into rounds, separated into rings
Lemon wedges, for garnish

Steps:

  • For the lemon butter: Whisk together the lemon juice, salt, pepper, lemon zest and butter in a deep medium bowl until well blended (mixture will be like a thick sauce). Set aside until ready to use.
  • For the halibut and crispy shallots: Combine the olive oil, lemon juice, garlic, salt, pepper and garlic in an 8-by-8-by-2-inch glass dish. Whisk the marinade to blend. Add the halibut and turn several times to coat evenly. Let stand 15 to 20 minutes.
  • Combine the grapeseed oil and shallots in a medium heavy saucepan over medium-high heat. Cook, stirring often, until the oil heats up and the shallots turn golden brown, 5 to 7 minutes. Transfer the shallots with a slotted spoon to several layers of paper towels to drain and crisp. Sprinkle with salt and pepper just before using.
  • Heat a large dry nonstick skillet over medium-high heat. Lift the halibut from the marinade, letting the excess drain off. Add the halibut to the hot skillet and sear 3 minutes. Turn the fish over using a flexible metal spatula. Sear until still slightly pink in the center, about 3 minutes longer, depending on thickness. Transfer the halibut to plates. Top with a generous dollop of lemon-butter and pile the shallots alongside or scatter around the fish. Garnish with the lemon wedges and serve.

ROASTED HALIBUT WITH LEMONS, OLIVES AND ROSEMARY

Roasted Halibut With Lemons, Olives and Rosemary image

Fish can be finicky dinner-party fare, especially for the distracted cook. Step away for a moment to sip your cocktail and your fillets might go from pearly to parched. This dish, though, inspired by one from Southern Italy, elegantly feeds a crowd. The fish, halibut, is seasoned with chile, salt and olive oil, then topped with rosemary, lemon and olives and roasted. It's a lighter main dish that won't leave anyone hungry.

Provided by Melissa Clark

Categories     dinner, easy, quick, weekday, main course

Time 10m

Yield 2 servings

Number Of Ingredients 7

2 (8-ounce) halibut fillets, preferably at least 1-inch thick
1 1/2 teaspoons extra virgin olive oil, more to taste
Kosher salt
Ground chile pepper, preferably Turkish or Aleppo
2 rosemary branches
1 small lemon, very thinly sliced
1/4 cup sliced, pitted calamata or other good-quality black olives

Steps:

  • Heat oven to 450 degrees. Place fish in a baking dish, brush fillets with 1 teaspoon of oil and season with salt and chile pepper. Top each fillet with a rosemary branch and several slices of lemon. Drizzle remaining oil over lemon slices and sprinkle with additional salt. Scatter olives over fish and pan.
  • Bake until just opaque, about 10 minutes. If lemon slices have not browned or singed (this will depend on how thinly you slice them), place pan under broiler for 1 to 2 minutes. Serve drizzled with more olive oil; sprinkle with more salt and chili, if desired.

  • Nutritionists tout fish as a great source of omega-3 fatty acids, which studies suggest may be beneficial for people fighting breast and prostate cancer. But recent research suggests that not all fish are created equal, and what people really should be looking at is the ratio of omega-3 to omega-6, as omega-6s may promote cancer growth. This ratio could be at the heart of the benefits of the so-called Mediterranean diet, which some researchers believe is linked to lower cancer rates in Mediterranean countries. The magic ratio of omega-3s to omega-6s appears to be no less than 1 to 1 (and preferably a lot more omega 3s). For example, halibut's ratio is 2.5 to 1 (good), wild king salmon comes in at 5.6 to 1 (better), and fish roe weighs in at 11.1 to 1 (a slam dunk). By contrast, farm-raised catfish has fifty times more omega-6s than omega-3s. A good rule of thumb is to look for wild fish, as opposed to farm-raised, since the feed given to some cultivated fish can be high in omega-6s.

HALIBUT WITH CITRUS AND CILANTRO

Halibut with Citrus and Cilantro image

This delicious recipe for halibut with citrus and cilantro comes from chef Marco Pierre White.

Provided by Martha Stewart

Categories     Seafood Recipes

Number Of Ingredients 12

Coarse salt
16 bulbs baby fennel, root ends trimmed and tops trimmed on the bias
Zest of 1 lemon, cut into 1-by-1/16-inch strips
1 cup white-wine vinegar
1 cup sugar
Extra-virgin olive oil
2 oranges, preferably Mineola
Juice of 4 oranges, preferably Mineola
4 (6-to-8-ounce) halibut steaks, skin-on
10 coriander seeds
4 sprigs fresh bay leaves
Fresh cilantro sprigs, for garnish

Steps:

  • Bring a large pot of water to a boil over high heat; prepare an ice-water bath. Add salt to boiling water; return to a boil. Add fennel and cook until just tender, about 3 minutes. Drain and immediately transfer to ice-water bath to cool; drain and set aside.
  • Place lemon zest in a small saucepan and add enough water to cover. Place over medium high heat and bring to a boil; drain, return lemon zest to saucepan and repeat process twice more.
  • Place vinegar and sugar in a medium saucepan. Bring to a boil over medium heat, stirring occasionally, until sugar is dissolved. Remove from heat and add lemon zest; let steep for at least 10 minutes.
  • Slice the top and bottom of 2 oranges with a paring knife. Set one of the flat sides on your work surface. From top to bottom, following the curve of the fruit, cut away peel and white pith. Trim off any remaining pith. Holding the orange over a small saucepan, cut along both sides of each segment, staying close to the membrane, to release. Drizzle with olive oil and toss to combine; set aside.
  • In a medium skillet, bring orange juice to a boil over medium-high heat. Cook until thickened, about 3 minutes. Transfer to a medium heatproof bowl and drizzle with olive oil; set sauce aside.
  • Meanwhile, add just enough olive oil to coat bottom of nonstick skillet; place over high heat. When oil is hot, add fish and cook, turning once until opaque, about 7 minutes.
  • Heat a large dry skillet over medium-high heat. Add coriander seeds and toast until fragrant, 4 minutes. Remove from pan and crack slightly with the back of a spoon. Add to saucepan with orange segments and place over medium-low heat to warm.
  • Place fennel in a medium skillet; drizzle with olive oil. Add bay leaves and place over medium-low heat until warmed, about 2 minutes.
  • Divide fish and fennel evenly between 4 plates. Top fish with orange segments and steeped lemon zest; spoon over sauce. Garnish with cilantro. Serve immediately.
