HALVAH SEMIFREDDO WITH HAZELNUTS

Halvah Semifreddo With Hazelnuts image

Aglaia Kremezi, a historian of Greek food who eschewed sesame desserts as a child, is now an enthusiast. In her own kitchen, she has rethought the traditional tahini filling for a Lenten cinnamon roll called tahinopita, and developed a super-easy recipe for halvah semifreddo, a frozen emulsion of fresh whipped cream and crystalline halvah. It is a spectacular dessert to serve at a dinner party, and the sesame undertones will surprise and delight guests.

Time 30m

Yield 10 to 12 servings

Number Of Ingredients 4

14 ounces/400 grams plain or vanilla halvah, preferably made with sugar, not honey (available online or in Middle Eastern specialty shops or groceries)
1 cup/140 grams hazelnuts or pistachios, toasted and coarsely ground, plus whole hazelnuts for decorating, optional
1/2 cup/125 milliliters heavy cream, cold
For serving, dark chocolate sauce for serving, optional, or orange marmalade or chunky apricot or peach preserves, thinned with orange liqueur, optional

Steps:

  • Line a small loaf pan with plastic wrap. In a bowl, mash the halva with a strong fork until crumbled.
  • Stir in the nuts (reserve some for topping), while continuing to mash, mixing the nuts and halvah together until almost smooth.
  • Beat the cream to soft peaks and fold into the halvah mixture. Pour into the loaf pan and bang the pan on the counter several times to distribute the mixture evenly. Transfer to the freezer and freeze until firm, at least 4 hours. (To keep longer, wrap semifreddo in plastic wrap and keep for up to 1 month.)
  • To serve whole, place the frozen loaf in a serving dish. Drizzle chocolate sauce or spoon fruit preserves on top, if desired. Arrange hazelnuts on top and slice at the table. Alternatively, serve as individual slices and pass toppings at the table.

Time 4h20m

Number Of Ingredients 10

1 cup hazelnuts, blanched, toasted and cooled
1 cup sugar
2 cups heavy cream, whipped
3/4 cup egg whites*
1/4 teaspoon pure vanilla extract
Warm glossy chocolate sauce, recipe follows
3 ounces unsweetened chocolate
7 ounces semisweet chocolate
3/8 cup light corn syrup
1/2 cup hot water

Steps:

  • Grease a 10-inch spring form pan and line with parchment paper.
  • In a food processor grind the hazelnuts and 3/4 cup sugar together, pulsing to avoid over blending so it does not become a paste. Whip the cream using a mixer fitted with a whisk attachment or a hand mixer, until fluffy, soft peaks. Transfer to the refrigerator.
  • In a clean dry bowl, whip the egg whites until soft peaks form. Add the vanilla extract and 1/4 cup sugar and continue whipping until glossy and stiff, about 30 seconds more. Fold into the whipped cream, then fold in the ground nut mixture. Spoon the mixture into the spring form pan. Smooth the top. Freeze at least 4 hours or overnight.
  • Warm Glossy Chocolate Sauce: In the top half of a double boiler, combine the 2 chocolates over simmering water. Stir constantly until melted, then whisk in the corn syrup and water. Whisk until smooth and shiny.
  • When ready to eat, remove the collar and serve frozen with chocolate sauce.
  • *RAW EGG WARNING
  • Food Network Kitchens suggest caution in consuming raw and lightly-cooked eggs due to the slight risk of Salmonella or other food-borne illness. To reduce this risk, we recommend you use only fresh, properly-refrigerated, clean, grade A or AA eggs with intact shells, and avoid contact between the yolks or whites and the shell.

Time 38m

Yield 4 servings

Number Of Ingredients 9

1 cup hazelnuts
1 pint vanilla ice cream
1 pint hazelnut or coffee ice cream
1 1/2 cups heavy cream
Pinch salt
2 tablespoons confectioners' sugar
1/4 cup plus 2 tablespoons hazelnut liqueur, such as Frangelico
1 cup good-quality espresso, hot
1-ounce bittersweet chocolate, thinly shaved with a vegetable peeler

Steps:

  • Preheat the oven to 350 degrees F.
  • Put the hazelnuts in a single layer on a small sheet pan. Toast the nuts for 8 minutes, until they are lightly golden. Pour the nuts onto a clean kitchen towel and rub them to remove the peels. Put the hazelnuts in a large sealable plastic bag, seal the bag, and pound the nuts with a rolling pin until roughly crushed. Set aside.
  • Using a small ice cream scoop, scoop the ice cream into 16 equal-size balls (8 of each flavor) and arrange in a single layer on a cold plate lined with plastic wrap. Cover the ice cream balls with more plastic wrap and freeze again until firm.
  • In a medium bowl, whip the cream, a pinch of salt, sugar and 2 tablespoons hazelnut liqueur to stiff peaks, but do not over beat.
  • To serve, put 2 scoops each of hazelnut (or coffee) and vanilla ice creams into each glass. Add to the top of each 1 tablespoon hazelnut liqueur and 2 tablespoons crushed hazelnuts. Pour 1/4 cup espresso into each bowl. Top the ice cream with a dollop of whipped cream and shaved chocolate. Serve immediately.
  • Entertaining Notes: If you are doing this for a larger party you can pre-scoop the ice cream right into the glasses and store, covered, in the freezer.

MY NUTTY SEMIFREDDO

My Nutty Semifreddo image

I found this recipe quite some time ago and have turned it into my own. It is utterly delicious. I tend to eat it while it is still a little runny; if you want a firmer texture, freeze overnight. Put in a fancy glass for a great dessert.

Yield 8

Number Of Ingredients 6

2 teaspoons vegetable oil
2 cups white sugar
1 cup water
1 pound skinned, toasted hazelnuts
2 ½ cups heavy whipping cream
8 eggs, separated

Steps:

  • Lightly grease a baking sheet with oil. Line a 10-inch springform tin with plastic wrap.
  • Combine 1 cup sugar and water in a small saucepan over medium-low heat. Cook, without stirring, until sugar dissolves and syrup starts to bubble and turn golden brown, about 8 minutes. Stir in hazelnuts. Remove from heat and pour evenly onto the oiled baking sheet. Let praline cool until solid, about 15 minutes.
  • Place half of the hazelnut praline in a food processor; blend into a fine powder. Pour into a bowl. Blend remaining praline into coarse chunks.
  • Beat heavy cream in large bowl with an electric mixer on medium speed until firm peaks form.
  • Combine egg yolks and remaining 1 cup sugar in another bowl; beat with the electric mixer on medium speed until smooth and pale, 3 to 5 minutes. Fold into whipped cream.
  • Beat egg whites in another bowl with an electric mixer on medium speed until stiff peaks form. Fold into the whipped cream and egg yolk mixture. Fold in hazelnut powder and hazelnuts chunks. Spoon into the prepared springform tin; cover with plastic wrap.
  • Freeze until semifreddo hold its shape, about 1 hour. Stir well. Return to freezer and freeze, stirring every hour, until firm, 4 to 5 hours more.

Tips:

  • For the best texture, use a high-quality chocolate with at least 70% cocoa solids.
  • Make sure the cream is very cold before whipping it. This will help it reach stiff peaks more easily.
  • To get a smooth and creamy semifreddo, fold the whipped cream into the chocolate mixture gently. Overmixing can cause the mixture to become grainy.
  • If you don't have a loaf pan, you can use a 9x13 inch baking dish. Just be sure to adjust the baking time accordingly.
  • Halvah semifreddo can be made up to 3 days in advance. Cover it tightly with plastic wrap and store it in the freezer.

Conclusion:

Halvah semifreddo is a delicious and elegant dessert that is perfect for any occasion. It is easy to make and can be customized with your favorite flavors. So next time you are looking for a special dessert, give halvah semifreddo a try.
