Time 2h

Number Of Ingredients 11

2 meaty ham hocks
1 onion, peeled and quartered through root
3 garlic cloves, smashed
1 celery stalk, cut into 2-inch pieces
3 sprigs fresh thyme
1 bay leaf
1 jalapeno or serrano chile, intact with a split down 1 side
Coarse salt and freshly ground pepper
3 1/2 quarts water
1 pound small red potatoes, halved
2 pounds green beans, stem ends trimmed, halved crosswise

Steps:

  • Combine ham hocks, onion, garlic, celery, thyme, bay leaf, chile, 3/4 teaspoon salt, and the water in a large pot. Bring to a boil over high heat. Reduce heat, and simmer, uncovered, 1 hour 30 minutes.
  • Transfer ham hocks to a plate. Discard chile, and add potatoes to pot; simmer until just tender, 10 to 12 minutes.
  • When ham hocks are cool enough to handle, pull meat off bones (discard bones), shred into bite-size pieces, and return to pot. Add green beans, and return to a simmer. Cover, and cook until beans are just tender, about 8 minutes. Season with pepper. Serve vegetables and meat with a slotted spoon; reserve broth for another use. If storing leftovers, store in broth.

Time 1h10m

Yield 10

Number Of Ingredients 14

2 pounds fresh green beans, trimmed and snapped
48 ounces water
1 ½ pounds smoked ham, cut into chunks
2 cubes chicken bouillon
½ teaspoon paprika
¼ teaspoon cayenne pepper
4 tablespoons butter
4 tablespoons quick-mixing flour (such as Wondra®)
½ onion, finely diced
1 teaspoon dried minced onion
1 teaspoon paprika
½ teaspoon ground black pepper
¼ cup water
1 ½ cups sour cream

Steps:

  • Cover green beans with water in a large pot. Add ham, bouillon, paprika, and cayenne. Bring to a boil over high heat; reduce heat to low and let simmer until beans are tender, about 30 minutes. Remove from heat and let cool, 20 to 30 minutes.
  • Meanwhile, melt butter in a frying pan over medium heat. Add flour and cook until almost brown, 3 to 5 minutes. Stir in diced onion; cook until it begins to brown, 7 to 8 minutes. Reduce heat to medium-low; cook and stir dried onions in the mixture until they begin to lightly brown, 3 to 4 minutes, being careful as they burn easily. Add paprika and pepper. Pour in water and stir until mixture is smooth.
  • Whip sour cream in a bowl and mix into flour mixture until smooth. Stir sour cream mixture into cooled green beans. Heat soup over medium heat until simmering; cook until heated through, about 5 minutes. Serve.

CROCK POT GREEN BEANS & HAM

Crock Pot Green Beans & Ham image

I came up with this recipe when I had an abundance of fresh green beans. After canning 30 quarts, I knew I needed to find something else to do with all those beans! It's easy to prepare and one of my family's "comfort food" favorites. NOTE: not every crockpot cooks the same. My Rival crock pot is 20 years old and on the "high" setting food actually comes to a low boil. If your crock pot does not get that hot, then you will need to adjust for a longer cooking time.

GREEN BEANS WITH GARLIC AND HAM

Green Beans With Garlic and Ham image

We always had these beans with our Christmas dinner. They are very flavorful and a family favorite. Most of the work can be done in advance. Although there is alot of garlic, the cooking process mellows it considerably.

Categories     Ham

Time 40m

Yield 10 serving(s)

Number Of Ingredients 6

24 cloves garlic (peeled, halved lengthwise)
2 tablespoons salt
3 lbs green beans, trimmed
5 tablespoons olive oil
3/4 lb ham steak, cut into strips 1/4 x 2 inches
3 tablespoons unsalted butter

  • Pat dry.
  • Add salt to pot; return water to boil and add green beans.
  • Cook beans until just tender, about 6 minutes.
  • Drain beans, rinse under cold water, pat dry and set aside.
  • Heat 2 T oil in heavy nonstick skillet over medium-high heat.
  • Add ham and saute until crisp, 6 or 7 minutes depending on the moisture content of the ham.
  • Set aside.
  • Can be prepared 1 day ahead.
  • Keep garlic separate from beans and ham.
  • Melt butter with remaining oil in a large heavy skillet over medium high heat.
  • Add garlic and mash with a fork or the back of a spoon.
  • Add green beans and ham.
  • Toss until heated through and coated with garlic.
  • Season to your taste with salt and pepper.
  • Serve.

Tips:

  • Select fresh green beans: Choose green beans that are bright green in color, crisp, and free from blemishes.
  • Prepare the ham bone: Remove any excess fat or meat from the ham bone. You can use a smoked or unsmoked ham bone, depending on your preference.
  • Soak the ham bone: Place the ham bone in a large pot of cold water and bring to a boil. Reduce heat to low and simmer for 1-2 hours, or until the ham bone is tender.
  • Add the green beans: Once the ham bone is tender, add the trimmed green beans to the pot. Bring to a boil again, then reduce heat to low and simmer for 10-15 minutes, or until the green beans are tender-crisp.
  • Season the green beans: Season the green beans with salt, pepper, and any other desired seasonings. You can also add a bit of butter or olive oil for extra flavor.
  • Serve the green beans: Serve the green beans immediately as a side dish or main course. You can also garnish with fresh herbs or a sprinkle of grated Parmesan cheese.

Conclusion:

Ham bone green beans are a classic Southern dish that is easy to make and packed with flavor.
