HAM AND CHEESE PIE
This pie doubles as a formal dinner or picnic dish. It is our favorite savory pie. I don't know where the original came from-somewhere down south but I have added more onion, pepper, nutmeg, cayenne and cheese. Also the original called for regular deli ham-holy salt-it just about killed us! So here you go and by the way I like it best cold.

Steps:
- Boil the potatoes in salted water for 8-10 mins, until tender but still firm. Leave to cool, then slice.
- Heat the oven to 200C/180C fan/ gas 6. Unroll the pastry with its baking parchment on a baking tray. Reserve 1 tbsp of the crème fraîche, then spread the rest over the pastry, leaving a 2cm border around the edge. Season. Layer the potatoes, ham and cheese over half of the pastry, seasoning the potatoes as you go.
- Fold over the other half of the pastry and use a fork to seal the edges. Trim with a knife for a neat finish - the pie should look like a big sausage roll. Mix a little water into the reserved crème fraîche, then brush all over the pastry. Make a few cuts along the length, then bake for 35-40 mins until golden. Leave to cool for 10 mins, then serve with a salad, if you like.

HAM AND CHEESE PIE
This is a modernized version of the 1970's Bisquick Pie, however, no Bisquick is used in this delicious pie. It's easy to make, without the bother of a pie shell, rolling dough, parbaking etc. Can be served warm or at room temperature, or, as an hors d'oevre, cut into 1 - inch squares. Tips:
- Prepare the pie crust in advance: Making the pie crust ahead of time allows it to chill and rest, resulting in a flakier and more tender crust. You can make the crust up to 3 days in advance and store it in the refrigerator or freeze it for up to 2 months.
- Use high-quality ingredients: The quality of your ingredients will greatly impact the taste of your ham and cheese pies. Use fresh, flavorful ham and cheese, and choose a good quality pie crust mix or recipe.
- Don't overfill the pie crusts: Overfilling the pie crusts can make them difficult to seal and can cause the filling to spill out during baking. Fill the pie crusts no more than 2/3 full.
- Bake the pies until the crust is golden brown and the filling is bubbly: The baking time will vary depending on the size of your pies, but generally, they should be baked for 30-45 minutes. Check the pies halfway through baking and cover them with foil if the crust is browning too quickly.
- Let the pies cool before serving: Allow the pies to cool for at least 15 minutes before serving. This will help the filling to set and make the pies easier to slice.
Conclusion:
Ham and cheese pies are a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. They are also a great option for potlucks and picnics. With a little planning and effort, you can easily make delicious ham and cheese pies at home. So next time you're looking for a quick and easy meal, give this recipe a try!
