HAM, POTATO, & GREEN BEAN SOUP

Ham, Potato, & Green Bean Soup image

This soup always makes me think of summers on the farm. Nothing like fresh green beans and potatoes. Mmmm. You could also use frozen green beans, but add them when the potatoes are about 5 minutes from done, apx 10 minutes into boiling.

  • Use a variety of vegetables. This will give your soup a more complex flavor and texture. Some good options include potatoes, carrots, celery, green beans, and peas.
  • Don't overcook the vegetables. You want them to be tender, but not mushy. This will help to keep more nutrients in the soup.
  • Add some herbs and spices. This will help to enhance the flavor of the soup. Some good options include thyme, rosemary, garlic, onion, and salt and pepper.
  • Use a good quality ham. This will make a big difference in the flavor of the soup. Look for a ham that is fully cooked and has a good smoke flavor.
