1 boneless fully cooked ham (6 to 7 pounds)
1 large onion, chopped
1/4 cup butter, cubed
2 cups corn bread stuffing mix
1-1/2 cups chopped pecans, toasted
1/2 cup minced fresh parsley
1/4 cup egg substitute
2 tablespoons prepared mustard
1/2 cup honey
2 tablespoons orange juice concentrate
RAISIN SAUCE:
1/2 cup packed brown sugar
2 tablespoons all-purpose flour
1/2 teaspoon ground mustard
1/2 cup raisins
1-1/2 cups water
1/4 cup cider vinegar

Steps:

  • Using a sharp thin-bladed knife and beginning at one end of the ham, carefully cut a 2-1/2-in. circle about 6 in. deep; remove cutout. Cut a 1-1/2-in. slice from the end of removed piece; set aside. , Continue cutting a 2-1/2-in. tunnel halfway through ham, using a spoon to remove pieces of ham (save for another use). Repeat from opposite end of ham, cutting and removing ham until a tunnel has been cut through entire length of ham., In a small skillet, saute onion in butter until tender. Number Of Ingredients 8

1 (7- to 8-lb) fully cooked bone-in shank-end ham
6 cups water
1/4 cup pure maple syrup
1 cup granulated maple sugar*
1 teaspoon dry mustard
1/4 cup apple juice
1/4 teaspoon ground cloves (or 10 cloves stuck into ham)
2 cups raisins (10 oz)

Steps:

  • Put ham cut side down in a large deep heavy pot (about 10 quarts) and add water and syrup.
  • Bring liquid to a boil, then reduce heat to low and gently simmer ham, covered, until tender, 2 to 2 1/2 hours. Uncover and cool slightly.
  • Preheat oven to 350°F.
  • When ham is cool enough to handle, remove from pot, reserving cooking liquid, then cut off any rind and excess fat, leaving a thin layer. Transfer ham to a roasting pan.
  • Whisk together sugar, mustard, apple juice, and ground cloves, if using, in a bowl, then spoon over ham. Add raisins and 1 cup reserved cooking liquid to roasting pan and bake in middle of oven, basting occasionally, until ham is glazed and juices are bubbling, 30 to 40 minutes. Serve warm or at room temperature.

1 Tbsp olive oil
1 lb ham steak, bone in, fully cooked
1 tsp ginger root, grated
2 Tbsp unsalted butter
1/4 c raisins
1 Tbsp italian parsley, minced

Steps:

  • 1. In a measuring cup, stir together cider, vinegar, mustard seeds, mustard.
  • 2. In a large heavy skillet heat oil over moderately high heat until hot but no t smoking and saute ham until golden and heated through, about 4 minutes on each side. Transfer ham to a platter and keep warm, covered.
  • 3. In fat remaining in skillet cook onion over moderate heat, stirring occasionally, until golden, about 5 minutes. Add ginger and cook, stirring, 1 minute. Stir cider mixture and add to skillet. Boil sauce, stirring occasionally, until reduced to about 2/3 cup, about 5 minutes. Cut butter into 1/2" pieces. Add raisins to sauce and whisk in butter and parsley until butter is incorporated.
