1 pound Italian loaf, crust removed, cut crosswise into 1/2-inch slices
1 cup diced Virginia ham (1/4-inch dice)
2 cups grated Swiss cheese
2 tablespoons minced chives
3 small tomatoes, cored and sliced into 1/4-inch rounds
8 large eggs
4 cups milk
2 tablespoons Dijon mustard
2 teaspoons coarse salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Butter a 9-by-13-inch baking dish. Arrange half of the bread slices in the bottom of the dish. Sprinkle with half of the ham, cheese, and chives. Add another layer of bread and cover it with the remaining ham, cheese, and chives. Arrange the tomato slices on top.
  • In a large bowl, whisk the eggs, milk, mustard, salt, and pepper until well combined. Pour mixture over the bread and cheese layers. Cover and refrigerate overnight.
  • Preheat oven to 350 degrees. Let strata come to room temperature (about 25 minutes). Bake strata, uncovered, until golden and fluffy and a knife inserted comes out clean (60 to 70 minutes). Let stand 20 minutes before serving.

12 large eggs
1 1/2 cups milk
1/2 cup heavy cream
Pinch freshly grated nutmeg
Pinch cayenne pepper
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 cup diced baked ham
1 cup Oven-Dried Tomatoes, chopped, recipe follows
1 tablespoon minced flat-leaf parsley leaves
1 1/2 teaspoons thinly sliced fresh chives
2 cups shredded extra-sharp cheddar cheese (about 8 ounces)
1 pound sourdough bread (boule preferred), crust removed and cut into 1-inch cubes
2 pounds ripe plum tomatoes, cored and cut in half lengthwise
1 1/2 teaspoons kosher salt
Extra-virgin olive oil (optional)
Fresh herb sprigs, like thyme, rosemary, or sage (optional)

Steps:

  • Grease a 3-quart gratin dish or casserole with 1 teaspoon of the butter.
  • In a large bowl, whisk together the eggs, milk, cream, nutmeg, cayenne, salt, and pepper. Set aside. In a small bowl, toss together the ham, tomatoes, parsley, and chives.
  • To make the strata: Scatter a 1/2 cup of the cheese over the bottom of the buttered dish, cover with one-third of the bread, and then half of the tomato mixture. Repeat. Top with a final layer of bread and remaining cheese.

2 pounds ripe plum tomatoes, cored and cut in half lengthwise
1 teaspoon kosher salt
3 tablespoons extra-virgin olive oil
4 to 5 sprigs fresh herbs, such as thyme, rosemary, oregano, or marjoram

  • Butter a 3-quart gratin dish or casserole. Whisk eggs, milk, cream, 1 teaspoon salt, 1/4 teaspoon black pepper, nutmeg, and cayenne pepper in a large bowl. Toss ham, tomatoes, parsley, and chives together in a small bowl.

18 slices of thin sandwich bread
12 slices American cheese
6 green onions, thinly sliced
1/2 lb finely chopped cooked ham (2 C. loosely packed)
6 eggs, slightly beaten
2 1/2 cups milk
1 teaspoon salt
1 teaspoon dry mustard
1 teaspoon paprika
1/2 teaspoon Worcestershire sauce
1/4 teaspoon pepper
6 slices tomatoes
2 tablespoons minced parsley

Steps:

  • Place 6 slices of the bread in a 13"x9" inch baking pan or dish.
  • Top with 6 cheese slices, half of the onions, and half of the ham.
  • Top with 6 slices of bread, 6 slices of cheese and remaining onions and ham.
  • Top with 6 slices of bread.
  • Combine eggs, milk and seasonings.

12 ounces rye bread (about 5 cups) or 12 ounces pumpernickel bread, cut into 1-inch cubes (about 5 cups)
1/2 cup ham, chopped
1 teaspoon olive oil (optional)
1/2 small onion, minced
3 garlic cloves, roughly chopped
1 lb mushroom, sliced
3 cups milk
6 eggs, beaten slightly
1 teaspoon dried thyme
1/2 teaspoon fresh ground black pepper
1/4 teaspoon salt
6 ounces shredded swiss cheese, divided (about 1-1/2 cups)

Steps:
