Time 8h50m

Yield 60

Number Of Ingredients 10

7 large cucumbers, grated
5 large onions, grated
2 tablespoons salt, or as needed
3 cups white vinegar
3 cups white sugar
1 cup water
½ cup all-purpose flour
1 tablespoon ground turmeric
1 teaspoon ground ginger
1 teaspoon ground black pepper

Steps:

  • Combine cucumbers, onions, and salt together in a colander fitted over a bowl; place in the refrigerator for cucumbers and onions to drain, 8 hours to overnight.
  • Mix vinegar, sugar, water, flour, turmeric, ginger, and black pepper in a large saucepan; bring to a boil. Cook, stirring occasionally, until mixture is thickened, about 5 minutes. Add cucumbers and onions; boil for about 10 more minutes.
  • Sterilize jars and lids in boiling water for at least 5 minutes. Pack the relish into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for about 15 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

1/2 cup mayonnaise
Juice of 1 lime
2 teaspoons five-spice powder
1 teaspoon coriander seeds
1 tablespoon vegetable oil
1/2 red onion, small diced
1 red finger chile, seeded and diced
1/4 cup white wine vinegar
1/4 cup sugar
1 English cucumber, seeded and diced
Kosher salt
1/2 bunch fresh mint, stemmed and coarsely chopped
2 pounds ground lamb
1 shallot, minced
1/2 tablespoon fresh ginger, minced
1 clove garlic, minced
1 egg yolk
1 tablespoon five spice powder
Kosher salt and freshly ground black pepper
4 buns, for service
1 ripe tomato, sliced

Steps:

  • For the aioli:
  • In a small bowl, mix together the mayonnaise, lime juice, and five-spice powder. Refrigerate the aioli until ready to use.
  • For the relish:
  • In a saute pan over medium-high heat, toast the coriander seeds until fragrant. Drizzle in the vegetable oil, add the red onion and cook, stirring frequently, until translucent. Stir in the chile and white wine vinegar, and then sprinkle over the sugar, stirring until it dissolves.
  • Add the cucumber to the pan, and cook for 5 to 7 minutes over medium heat, and reduce slightly, achieving a light glaze consistency. Season the relish with salt, and let the mixture cool.
  • Just before serving the relish, stir in the mint, and season with salt, to taste.
  • For the burgers:
  • Put the ground lamb, shallot, fresh ginger, garlic, egg yolk, and five-spice powder in a bowl, and mix well. Season the mixture with salt, and black pepper. Divide and shape the lamb mixture into 4 (8-ounce) burger patties. Place the patties in the refrigerator for 1 hour, to allow the flavors to infuse.
  • Preheat a grill to medium-high and lightly oil the grate. Grill the lamb patties until they are seared on both sides, and cooked through. Remove the patties from the grill, and set aside. Place the buns on the grill, cut-side down, and toast until golden.

Provided by KristinV

Categories     Lunch/Snacks

Time 30m

Yield 4 serving(s)

Number Of Ingredients 14

4 tablespoons olive oil
1 small red onion (finely chopped)
1 celery rib (finely chopped)
2 garlic cloves (crushed)
220 g red kidney beans
75 g salted peanuts
250 g tofu
2 teaspoons curry paste (medium)
50 g breadcrumbs
egg substitute (equal to 1 egg)
1/2 small cucumber (peeled and deseeded)
2 tablespoons flat leaf parsley (chopped)
1 tablespoon white wine vinegar
2 teaspoons caster sugar

Steps:

  • Heat 1 tbs of the oil in a frying pan and gently fry all but 1 tbs of the onion with the celery for 5 minutes until thay are soft. Add the garlic and fry for another 2 minutes.
  • Put the kidney beans in a bowl and mash them lightly with a fork to break them up. Finely chop the peanuts in a food processor. Pat the tofu dry on kitchen paper, break it into pieces and add it to the nuts in the food processor. Blend them until the tofu is crumbly then add the mixture to the beans together with the fried vegetables, curry paste, breadcrumbs and egg replacer and mix everything well to obtain a thick paste.
  • Divide the mixture in the bowl into quarters and shape into burgers, dusting your hands with flour if the mixture is sticky. Heat the remaining oil in the pan and gently fry the burgers for about 4 minutes on each side, until golden.
  • Meanwhile, chop the cucumber finely and mix it with the reserved tablespoon of chopped onion, the parsley, vinegar and sugar in a bowl. Serve with the burgers.

Tips:

  • Choose the right bread: A good hamburger bun should be soft and fluffy, with a slightly crisp crust. It should also be able to hold up to the weight of the burger and its toppings without getting soggy.
  • Cook the burger patties to your desired doneness: If you like your burgers rare, cook them for about 2 minutes per side. For medium-rare, cook them for about 3 minutes per side. For medium, cook them for about 4 minutes per side. And for well-done, cook them for about 5 minutes per side.
  • Don't overcrowd the pan: When cooking the burger patties, don't overcrowd the pan. This will cause the patties to steam instead of sear, and they won't develop a nice crust.
  • Season the burger patties generously: Before cooking the burger patties, season them generously with salt and pepper. You can also add other spices, such as garlic powder, onion powder, or paprika.
  • Let the burger patties rest before serving: After cooking the burger patties, let them rest for a few minutes before serving. This will help the juices redistribute throughout the patties, making them more juicy and flavorful.
  • Use fresh, high-quality toppings: The toppings you use on your hamburgers can make a big difference in the overall flavor of the burger. Use fresh, high-quality toppings, such as lettuce, tomato, onion, and cheese.
  • Get creative with your toppings: Don't be afraid to get creative with your hamburger toppings. There are endless possibilities, so experiment and find what you like best.

Conclusion:

Hamburgers are a classic American food that can be enjoyed by people of all ages. They are easy to make and can be customized to suit your own taste. With a few simple tips, you can make the perfect hamburger at home. So fire up the grill and get cooking!
