Salt and freshly ground pepper
1 tablespoon extra-virgin olive oil
Rolls (recommended: Parker House)
16 dill pickles
Onion Relish, recipe follows
2 tablespoons extra-virgin olive oil
3 cloves garlic
2 onions, cut in 1/2 lengthwise and sliced thinly
Salt and freshly ground pepper
1/2 cup water
1/2 cup ketchup
2 tablespoons yellow mustard

Steps:

  • Heat a grill to high.
  • Combine all of the ground meat into a large mixing bowl. Shape into 16 (1-ounce) patties. Season patties generously with salt and pepper and drizzle with oil.
  • Cook burgers on a very hot grill for about 30 seconds on each side. If a smoky flavor is desired, you may place a lid on the grill during cooking. Serve the patties on Parker House rolls garnished with a dill pickle and Onion Relish.
  • Heat a large skillet over medium-high heat and add the olive oil and garlic cloves. Saute the garlic until lightly browned. Add the onions and continue to cook the mixture until golden brown. 1 large egg

500g minced beef
1 red chilli , deseeded and finely chopped
2 tbsp chopped coriander , plus small handful leaves, to serve
300g pack cherry tomatoes on the vine
4 tbsp olive oil
juice 1 lime
2 tbsp sweet chilli
small handful flat-leaf parsley leaves
1 small red onion , cut into wafer-thin slices
2 English muffins , toasted

Steps:

  • Heat oven to 200C/fan 180C/ gas 6. Mix the beef with the chilli and some chopped coriander, then season well. Shape into four patties about 2.5cm thick. Chill until needed.
  • Keeping the tomatoes on the vine, put them in a roasting tin. Drizzle over 1 tbsp of olive oil and season. Roast for 12-15 mins until just soft.
  • Heat 1 tbsp of oil in a non-stick frying pan. Then cook burgers on each side for 4 mins for rare or 5 mins for medium. For the relish, mix 2 tbsp of olive oil, the lime juice and sweet chilli sauce, parsley, coriander leaves and red onion. Zest of 1 lemon, very finely chopped
1 tsp (5 mL) dried oregano
1 tsp (5 mL) salt

2 tbsp (25 mL) flat leaf parsley, finely chopped
1 tsp (5 mL) anchovy paste (optional)
6 ciabatta buns, halved crosswise
Tomato-Caper Relish
1 tbsp (15 mL) olive oil
½ cup (125 mL) onion, finely chopped
2 cloves garlic, finely chopped
¼ tsp (1 mL) chili flakes
2 cups (500 ml) cherry tomatoes, halved lengthwise
1 cup (250 mL) sun-dried tomatoes, finely chopped
1 tbsp (15 mL) capers, drained
¼ tsp (1 mL) salt
1 tsp (5 mL) sugar
1 cup (250 mL) water
2 tbsp (25 mL) fresh basil, finely chopped

Place in refrigerator while preparing the Tomato-Caper Relish. 4. In a small saucepan heat oil over medium heat. Add onions and cook until translucent, about 5 minutes, add garlic and chili flakes and cook 1 minute longer. 5. Add cherry tomatoes and cook for 3 minutes. Add sun-dried tomatoes, capers, salt, sugar and water. Bring to the boil. 6. Once boiling reduce heat to low, cover and simmer sauce for 20 minutes. 7. Remove lid and continue cooking over low until the sauce has thickened and any excess liquid has evaporated, remove from heat to let cool. Once cooled stir in basil. 8. Heat the barbecue on high. Place patties on the grill and cook for 4 to 6 minutes on each side or until no longer pink inside. Do not overcook or they will be dry. While burgers are finishing, warm the ciabatta buns on cooler part of the grill. 9. Serve burgers on buns topped with relish and arugula.
