I came up with this recipe one day when I needed something quick and healthy for lunch but didn't want to go through a lot of trouble. -Nita Graffis, Dove Creek, Colorado

4 teaspoons butter, softened
6 plain bagels, split
6 slices deli ham
6 slices cheddar cheese
2 ounces cream cheese, softened
1/8 teaspoon salt
1/8 teaspoon pepper
1 large tomato, sliced
1 medium ripe avocado, peeled and sliced

Steps:

  • Spread butter over cut sides of bagels. Place buttered sides up on an ungreased baking sheet. Broil 4-6 in. from the heat for 3-4 minutes or until lightly browned. Set aside bagel tops., On the bottom of each bagel, place a slice of ham and cheddar cheese. Broil 3-4 minutes longer or until cheese is melted., Meanwhile, spread bagel tops with cream cheese; sprinkle with salt and pepper. Layer bottom halves with tomato and avocado. Replace tops.

This is a great recipe to me because I absolutely love eating breakfast and it doesn't matter what time of day it is. When I bite into a soft buttery bagel with just the perfect crunch and flake, with an explosion of maple syrup it is a treat, let me tell you. With the ham being browned, it brings out all the flavors. Nothing is better than the hot melted cheese and warm soft yolk. In addition, all of these flavors together bring me back to when my Grandma would make a big family breakfast, and now I have it all in a simple bagel!

1 tablespoon butter, divided
1 plain bagel, split
4 slices ham
2 eggs
salt and ground black pepper to taste
2 slices American cheese
2 tablespoons maple syrup

Steps:

  • Heat 1 1/2 teaspoons butter in a skillet over medium heat; arrange bagel halves, cut sides down, in the melted butter. Cook until bagel is very slightly toasted and softened, 1 to 2 minutes per side. Transfer bagel to a plate.
  • Cook ham slices in the same skillet until heated through, 1 to 2 minutes. Arrange 2 ham slices onto each bagel half.
  • Heat remaining 1 1/2 teaspoons butter in the same skillet; cook eggs in the melted butter until whites are set but yolks are still runny, about 3 minutes. Gently flip eggs and cook until whites are set, about 1 more minute. Season eggs with salt and pepper. Layer eggs and American cheese slices onto 1 bagel half; top with the second bagel half, creating a sandwich.
  • Place bagel sandwich back in the skillet and cover with a lid; heat until cheese is melted, about 45 seconds per side.

Number Of Ingredients 20

2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
1 cup eggnog
2 tablespoons sugar, divided
5 teaspoons salt, divided
3/4 teaspoon ground nutmeg
3 to 3-1/2 cups bread flour
8 cups water
TOPPING:
1 egg white
1 tablespoon water
2 tablespoons sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
SPICED CREAM CHEESE:
1 package (8 ounces) cream cheese, softened
1 tablespoon sugar
3/4 teaspoon rum extract
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the eggnog, 1 tablespoon sugar, 3 teaspoons salt, nutmeg and 1-1/2 cups flour; mix well. Stir in enough remaining flour to form a stiff dough; beat 1 minute longer., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Shape into 12 balls. Push thumb through centers to form a 1-1/2-in. hole. Stretch and shape dough to form an even ring. Place on parchment paper-lined baking sheets. Cover and let rest for 30 minutes, then refrigerate overnight., Let stand at room temperature for 30 minutes; flatten bagels slightly.
