Time 25m

Yield 6 servings

Number Of Ingredients 8

Kosher salt
1/4 cup almonds
1 1/2 pounds haricots verts (French string beans), root ends removed
3 tablespoons unsalted butter
1 1/2 tablespoons olive oil
2 shallots, minced
Freshly cracked black pepper
1/2 lemon, zested and juiced

Steps:

  • Bring a large pot of salted water to boil.
  • Meanwhile, in a large saute pan, toast the almonds over medium-high heat until golden brown and fragrant, 3 to 5 minutes. Remove from the pan, finely chop and set aside.
  • Blanch the string beans in salted boiling water until crisp but tender, 2 to 3 minutes. The salt will impart flavor as well as help keep the string beans crisp. Immediately drain and run cold water over the beans or plunge into an ice bath to cool and stop the cooking process, then remove and completely dry.
  • Return the saute pan to the burner over medium heat and melt the butter with the olive oil. Add the shallots, sprinkle with salt and pepper and cook until starting to brown, stirring occasionally, 3 to 5 minutes. Toss the drained beans with the shallots and add the lemon zest and juice. Cook to heat the beans completely through, 1 to 2 minutes.
  • Remove from the heat and season with additional salt and pepper if needed. Toss with the toasted chopped almonds and transfer to a serving dish.

5 tablespoons unsalted butter, softened
3 tablespoons finely chopped shallots
3 tablespoons finely chopped flat-leaf parsley
2 teaspoons finely chopped tarragon
1 1/2 teaspoons grated lemon zest
1 tablespoon fresh lemon juice
2 lb haricots verts or other green beans, trimmed

Steps:

  • Stir together all ingredients except haricots verts with 3/4 teaspoon salt and 1/4 teaspoon pepper in a large bowl until combined well.
  • Cook beans in a large pot of boiling salted water (1 tablespoon salt for 6 quarts water), uncovered, until crisp-tender, about 6 minutes, then drain. Toss with herb butter.
  • Do Ahead
  • Herb butter can be made ahead and chilled, covered, 3 days or frozen, rolled into a cylinder in plastic wrap and kept in a sealed bag, 1 week. Haricots verts can be trimmed 1 day ahead and chilled in a sealed bag lined with paper towels.

Tips:

  • Select the freshest green beans: Look for vibrant green color, crisp texture, and no signs of wilting or bruising.
  • Trim the green beans properly: Remove the tough ends of the beans by snapping them off or using a sharp knife.
  • Blanch the green beans to preserve their color and texture: Bring a large pot of salted water to a boil, add the green beans, and cook for 2-3 minutes. Immediately transfer the beans to an ice bath to stop the cooking process.
  • Use high-quality olive oil and garlic: These ingredients are essential for creating a flavorful and aromatic dish. Opt for extra virgin olive oil for its superior taste and health benefits.
  • Toast the almonds for extra flavor: Toasting the almonds in a pan or in the oven brings out their nutty flavor and adds a nice crunch to the dish.
  • Use fresh herbs for added freshness: Parsley, thyme, or basil are great choices for adding a pop of color and flavor to the dish.
  • Season the dish to taste: Use salt and pepper to adjust the seasoning according to your preference.
