Time 1h

Yield 24 serving(s)

Number Of Ingredients 8

2 1/4 cups whole wheat pastry flour, divided
1 cup oatmeal
2 teaspoons vanilla, divided
1/2 cup sugar, divided (or other sweetener)
5 small apples, diced (peeling optional)
2 teaspoons cinnamon
1/2 teaspoon nutmeg
8 tablespoons Smart Balance butter spread, cold

Steps:

  • Heat oven to 350.
  • In food processor, pulse 2 c flour, oatmeal, and 1/4 c sugar. Add cold butter spread and 1 t vanilla and pulse until mixture looks like granola, then pulse into a dough.
  • Press mixture into a greased 9 x 13 pan and bake 12 minutes.
  • Toss together apples, 1/4 c sugar, 1 t vanilla, cinnamon, and nutmeg. Spread over cooled crust and bake about 40 minutes more.

Tips:

  • Prepare the Ingredients: Before starting, ensure all ingredients are measured and ready. Use fresh apples for the best flavor and texture.
  • Use a Food Processor or Grater: Save time and effort by using a food processor or grater to quickly shred the apples. Alternatively, slice them thinly by hand.
  • Control the Sugar Level: Adjust the amount of sugar based on your preference. You can reduce or increase it according to your taste.
  • For a Chewy Texture: Use dark brown sugar instead of granulated sugar for a more chewy and moist texture.
  • Incorporate Spices: Enhance the flavor by adding spices like cinnamon, nutmeg, or ginger to the apple mixture.
  • Don't Overmix: Avoid overmixing the batter, as this can result in a tough texture. Mix just until the ingredients are combined.
  • Chill Before Baking: Refrigerate the dough for at least 30 minutes before baking. This will help prevent spreading and allow the flavors to meld.
  • Monitor Baking Time: Keep an eye on the bars while baking. Insert a toothpick into the center; it should come out clean when done.

Conclusion:

Harvest Apple Bars offer a delightful combination of sweet, tart, and chewy textures. With their simple ingredients and easy-to-follow instructions, they are a perfect treat for any occasion.
