2/3 cup brown sugar, packed
1/2 cup hatch chili pepper, roasted, chopped & peeled
1 teaspoon cider vinegar
1/4 teaspoon cinnamon
1/4 teaspoon salt
1/8 teaspoon allspice
1/8 teaspoon nutmeg
1 cup granulated sugar
1 1/4 cups flour
2 grated lemons, zest of
1/8 teaspoon salt
1/8 teaspoon cinnamon
1/8 teaspoon nutmeg
3/4 cup butter (1 1/2 sticks)
2 tablespoons heavy cream

Steps:

  • Combine the apples, brown sugar, chiles, vinegar, 1/4 teaspoon cinnamon, 1/4 teaspoon salt, allspice and 1/8 teaspoon nutmeg in a bowl and mix well.

3 hatch chiles (about 7 oz total)
1 cup yellow cornmeal
1 cup all-purpose flour
1/4 cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup cheddar cheese, grated and packed (smoked or extra-sharp)
1 cup buttermilk
2 large eggs
1/4 cup unsalted butter, melted and cooled

Steps:

  • Char chiles over gas flame or in broiler until blackened on all sides. Enclose in paper bag; let stand 10 minutes. Peel, seed and chop chiles. Set aside.
