1/2 cup water
5 Tablespoons cornstarch ((or arrowroot))
1 (13 ounce) can unsweetened coconut milk ((full-fat ONLY))
1/4 cup sugar ((you can use more to taste if you like it sweet))

Steps:

  • Combine cornstarch and water in a small bowl. Stir until cornstarch is dissolved then set aside.
  • In a medium-sized sauce pan over medium heat, combine coconut milk and sugar.
  • Whisk constantly until mixture begins to simmer.
  • While continuing to whisk, SLOWLY pour in the water/cornstarch mixture until it thickens.
  • Reduce heat to low and continue to whisk until you have a thick, pudding-like consistency (this is important, it needs to be thickened while it is heating or it won't set up).
  • Pour into a greased 8"x8" baking dish* or square containers (I actually like to use my smaller glass Tupperware containers becasue the sides are more straight, making for more consistent squares).
  • Allow to cool to room temperature (about 10-15 minutes) then cover and refrigerate for 2+ hours.
  • When ready to serve, cut into 2" squares and serve cold.
  • *Note: If serving as a custard or pudding, pour into individual serving ramekins or bowls and chill.

5 cups grated fresh coconut
2 cups boiling water
5 tablespoons cornstarch
5 tablespoons white sugar
¼ teaspoon ground nutmeg
1 pinch salt
2 teaspoons vanilla extract

Steps:

  • Stir coconut into boiling water in a large bowl. Let sit for 15 minutes, then strain through cheesecloth, squeezing out all of the liquid to yield 3 cups.
  • Stir together the cornstarch, sugar, nutmeg, and salt. Bring the coconut milk to a simmer in a saucepan over medium-high heat. Whisk in the sugar mixture, and cook until thickened, stirring constantly. When very thick, remove from heat ,and stir in vanilla. Pour into an 8x8-inch pan, and cover with plastic wrap. 1 (9 inch) unbaked pie crust
1 cup milk
1 (14 ounce) can coconut milk
1 cup white sugar
1 cup water
½ cup cornstarch
1 ¼ cups semi-sweet chocolate chips
1 ½ cups heavy cream
¼ cup white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Bake crust for 15 minutes, or until golden brown. Set aside to cool.
  • In a medium saucepan, whisk together milk, coconut milk and 1 cup sugar. In a separate bowl, dissolve the cornstarch in water. Bring coconut mixture to a boil. Reduce to simmer and slowly whisk in the cornstarch. Continue stirring mixture over low heat until thickened, about 3 minutes.

1/2 teaspoon salt
1 pineapple, peeled, cored and diced small
1/2 cup cornstarch
