4 cups shredded cabbage
1/4 white onion (chopped)
2 green onions (chopped)
1 (20 ounce) can crushed pineapple (with juice)
1/2 cup mayonnaise
2 Tablespoons apple cider vinegar
1/4 cup brown sugar
1 teaspoon salt
1/2 teaspoon pepper

Steps:

1 package coleslaw mix
1 small package frozen peas
3 green onions, chopped
3/4 cup pine nuts
2 packages beef flavored Ramen Noodles (save beef flavoring packet for dressing)
1 pkg frozen, pre-diced chicken breast (or 1-2 chicken breasts, diced)
1/4 cup soy sauce
1/4 cup balsamic vinegar
1 cup plus 2 tbsp. canola (or peanut) oil

Steps:

  • In large bowl, combine coleslaw mix, green onions, and frozen peas. For this portion you can use the same saute pan for all three steps. First, toast the pine nuts in the dry saucepan, then add them to the slaw mix. Next, crush the Ramen noodles in the package. Add one tbsp. of the oil to the pan, and quickly brown both packages and add to slaw mix. (Reserve beef flavoring packets for dressing). Next, add last tbsp. oil (or more if needed) to same pan, and saute chicken breast pieces until browned and cooked through. Add to slaw mix. In separate bowl or blender, add remaining oil, soy sauce, balsamic vinegar and beef seasoning packets to taste and blend well. Keep dressing and salad separate until just ready to serve. Mix and enjoy! Note: You can omit the chicken if you prefer a vegetarian dish, and you may substitute pine nuts for sunflower seeds, or different nuts or grains of your choosing. You may also add shredded carrots for additional flavor. This recipe is extremely variable!
