1 8 inch flour tortilla (Tumaros Low in Carb Wraps)
3 oz of ham, cooked and diced
2 tablespoons of pineapple salsa
scallions (optional)
1 oz shredded monterey jack cheese (lite)
Cooking Spray

Steps:

  • Turn the burner on to medium high heat.
  • Spray a non stick skillet with cooking spray..
  • Place the tortilla over on the skillet. On one side of the tortilla lay the diced ham, 2 tablespoons of pineapple salsa, and cheese on top. Scallions are optional if you want them inside. Fold the other side down and cook the tortilla on each side until the outside is golden brown and the cheese has melted.
  • Serve with fat free ranch dressing if desired.

1/4 cup finely shredded mozzarella cheese (1 oz)

Steps:

  • In 12-inch nonstick skillet, place tortilla. Spread with 1 teaspoon of the mayonnaise. Top with half of the ham, pineapple, bell pepper and cheese. Top with second tortilla.

1 cup cooked ham (finely diced)
8 ounces pineapple tidbits (drained )
1/4 cup green bell pepper (seeded and finely chopped)
1 cup Mozzarella cheese (shredded)
Pizza sauce (for dipping)

Steps:

  • Preheat a griddle or large skillet over medium-high heat.
  • Place a tortilla on the griddle. Spoon 1/4 cup of ham evenly over half of the tortilla. Top with 1 Tbsp of green pepper, 2 ounces of pineapple, and 1/4 cup of mozzarella. Fold the bare part of the tortilla over the top of the ingredients.
  • Cook until the bottom begins to brown. Carefully, flip the quesadilla over and continue to cook until the bottom browns and the cheese is melted. Remove from the griddle to a cutting board. Repeat with remaining ingredients.

10 flour tortillas
1 ½ pounds sliced ham
3 (8 ounce) packages shredded mozzarella and Cheddar cheese blend
1 (8 ounce) jar salsa
1 (15 ounce) can pineapple chunks, drained
1 (8 ounce) carton sour cream

Steps:

  • Heat a griddle over medium-high heat. Toast one side of a tortilla, 1 to 2 minutes. Lay 2 to 3 slices of ham on the other side of the griddle to heat through. I happen to love those BBQ chicken pizzas, especially with a little pineapple on top. So here's a lunch time creation when pizza dough or bread was not an option. Quick and so good! If I cook chicken for this I boil a chicken breast (can be frozen to begin with, just drop it in the water). After about 15-20 minutes just cut open the chicken to see if it is cooked all the way through and ready to use. If the chicken breast is defrosted it takes much less time, but time is estimated. I would encourage others to change this recipe up to create other pizza favorites making a pepperoni quesadilla, meat lovers, hawaiian, chicken alfredo, etc. Get creative! Pizza anyone?

4 flour tortillas
1 chicken breast
barbecue sauce
crushed pineapple
bacon bits (optional)
cheese (I prefer colby-jack)

  • Start to heat up a skillet on the stove because this won't take long.
