This sounds so good to me, with bacon, pineapple, Dijon mustard and macadamia nuts for some of the ingredients. Don't want to lose this from "Soup to Nuts."

8 ounces bacon, cut into 1/2 inch pieces
3 cups sweet potatoes, cooked and chopped
2 cups pineapple chunks
1/2 cup mayonnaise
1 tablespoon Dijon mustard
2 tablespoons fresh lime juice
1/2 teaspoon pepper
1/2 cup macadamia nuts, chopped
lettuce leaf, to line serving bowl

Steps:

  • Fry bacon in skillet until crisp; drain.
  • Crumble bacon.
  • Mix the bacon with sweet potatoes and pineapple in a large bowl.
  • Combine mayonnaise, Dijon mustard, lime juice and pepper in a small bowl; mix well.
  • Add to sweet potato mixture; mix gently.
  • Stir in nuts.
  • Spoon into lettuce lined serving bowl and serve.

This casserole is just so good it is the first thing I am asked to make every Thanksgiving.

1 cup light brown sugar
1 teaspoon ground cinnamon
6 large sweet potatoes
1 tablespoon cold butter, cut into pieces
2 teaspoons salt
6 firm bananas, sliced
2 (8 ounce) cans crushed pineapple
1 cup pineapple juice
1 teaspoon lemon juice
2 tablespoons honey

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Butter a 9x13-inch baking dish. Stir together the brown sugar and cinnamon until evenly blended; set aside.
  • Place the sweet potatoes into a large pot and cover with salted water. Bring to a boil over high heat; reduce heat to medium-low, cover, and simmer until just tender, 15 to 20 minutes. Drain and allow to steam dry for a minute or two; peel and cut into 1/2 inch slices.
  • Layer the potatoes into the prepared baking dish, dot with butter, and sprinkle with salt. Arrange the bananas over the potatoes and sprinkle evenly with the brown sugar mixture. Top with the crushed pineapple. Whisk together the pineapple juice, lemon juice, and honey until the honey has dissolved. Pour over the casserole.
  • Bake in the preheated oven until hot and browned on top, about 40 minutes.

This is a 90's potato salad - a new and improved, redone, much better potato salad. Not only does it have a sweet potato, in addition to a Russet potato, but it also contains corn, cucumber, and peanuts! Corn oil will do if you don't have canola.

1 large russet potato, peeled and quartered
1 large sweet potato, peeled and quartered
1 cup corn
1 teaspoon prepared Dijon-style mustard
2 tablespoons fresh lime juice
3 tablespoons chopped fresh cilantro
1 clove garlic, minced
3 tablespoons canola oil
½ teaspoon salt
¼ teaspoon ground black pepper
1 cucumber, halved lengthwise and chopped
½ red onion, thinly sliced
¼ cup finely chopped peanuts

Steps:

  • Place the Russet potato pieces into a large saucepan, and cover with salted water. Bring to a boil, turn the heat down, and simmer for 10 minutes. Add the sweet potato, and cook about 15 minutes more. Remove a piece of each potato, and cut it in half to see if it is cooked enough. Once the potatoes are tender, add corn kernels; cook another 30 seconds. Drain through a colander. Fill the saucepan with cold water, and drop vegetables into water. Cool for 5 minutes, and drain.
  • In a large bowl, whisk together mustard, lime juice, cilantro, and garlic. Slowly whisk in oil. Mix in salt and black pepper.
  • Cut cooled potatoes into 1 inch cubes, and add to dressing along with cucumber, and red onion. Toss well. Serve at room temperature or chilled. Toss the peanuts in just before serving.

1/3 cup pineapple juice
1/2 teaspoon cinnamon
1 banana, sliced
1/2 cup pineapple, crushed
1 teaspoon brown sugar

Steps:

  • Preheat oven to 400.
  • Combine potatoes, juice, 1/4 tsp cinnamon and mash.
  • Spray casserole with cooking spray.
  • Spread mixture, making a well in center.
  • Arrange banana around edge of well.
  • Spoon pineapple into well.
  • Sprinkle with cinnamon and brown sugar.
  • Bake 10-15 minutes.
  • Place in broiler till fruit is browned.

3 pounds sweet potatoes, peeled and cut into 1/2-inch cubes
1 medium mango, peeled and cut into 1/2-inch cubes
1 medium red onion, thinly sliced
Cooking spray
1-1/2 tablespoons chili powder
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup Miracle Whip
1/4 cup plain Greek yogurt
2 tablespoons thawed pineapple juice concentrate
2 serrano peppers, seeded and finely chopped, veins removed
Thinly sliced serrano pepper, optional

Steps:

  • Preheat oven to 350°. Place sweet potatoes, mango and onion in a single layer in 2 foil-lined 15x10x1-in. baking pans. Spritz with cooking spray; sprinkle with chili powder, salt and pepper. Bake, turning vegetables at least twice, until tender, 35-40 minutes; cool. Transfer to a large serving bowl., Combine Miracle Whip, yogurt, pineapple juice concentrate and serrano peppers. Fold into potato mixture. Refrigerate, covered, at least 1 hour. Serve cold. If desired, sprinkle with sliced serrano.
