1/4 cup whole cumin seeds (25g)
1/4 cup whole coriander seeds (15g)
2 1/2 ground turmeric (22g)
Small stick cinnamon (2g)
1 teaspoon whole cloves (2g)
1 teaspoon cardamom (4g)

Steps:

  • On a skillet over medium low heat add all the spices except for the turmeric.

1/4 cup cumin seed
2 1/2 tablespoons coriander seeds

1/4 cup black peppercorns
2 tablespoons green cardamom pods
1 teaspoon clove
2 teaspoons cinnamon
1 tablespoon turmeric plus 2 tsp. turmeric

Steps:

  • Place all of the whole spices (except turmeric) into a frying pan on medium heat and toast this for approximately 2-3 minutes. Do not let the spices burn.
  • When the spices cool, place them into a coffee grinder or a spice grinder. You could also use a mortar and pestle. Grind until smooth.
  • Run the mixture through a fine sieve to remove the large pieces. Then mix in the turmeric.
