1/2 tablespoon olive oil
1/2 cup yellow onion, minced
1/4 cup carrot, minced
3 garlic cloves, minced
1 lb ground chuck
1 lb ground pork shoulder
1/2 teaspoon red chili pepper flakes
1 tablespoon parsley, minced
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 egg
1/2 cup breadcrumbs
1/4 cup brewed coffee
1/4 cup Bourbon
1/4 cup brown sugar
1/8 cup soy sauce
1/4 cup ketchup
1 tablespoon Worcestershire sauce

Steps:

  • Heat olive oil in a covered pot over low heat and add onion, carrot and garlic. Cook for about 10 minutes, until tender. Cool completely.
  • In a large bowl, gently mix the ground beef and ground pork, then mix the cooked onion, carrot and garlic thoroughly into the meat. Add seasonings, eggs and bread crumbs. Gently blend the mixture together; do not overmix.
  • Form into a loaf and place in a greased baking sheet or pan and bake at 325 degrees until the internal temperature is 160 degrees (about 45 minutes).
  • Remove meatloaf from the oven, liberally brush on glaze and return it to oven for 10 minutes longer, or until the glaze has browned. Remove from oven and let it stand 10 minutes before slicing. Serve with mashed potatoes.
  • Glaze: Combine coffee, bourbon, brown sugar and soy soyce in a sauce pot over medium-high heat. Stir frequently until liquid is reduced by half. Add ketchup and Worcestershire sauce, stir and simmer on low heat for 10 minutes.

1/2 tablespoon olive oil
1/2 cup minced yellow onion
1/4 cup minced carrot
3 garlic cloves, minced I minced all 3 veggies in my small chopper
1 lb ground chuck
1 lb ground pork
1/2 teaspoon chili flakes
1 tablespoon parsley, I didn
1/2 teaspoon salt
1/4 teaspoon black pepper
1 egg
1/2 cup breadcrumbs, ...I used fresh bread that was frozen, works great in the chopper if its still frozen, do it before
1/4 cup brewed coffee
1/4 cup Bourbon
1/4 cup brown sugar
1/8 cup soy sauce
1/4 cup catsup
1 tablespoon Worcestershire sauce

Steps:

  • Heat oil over low heat, add onion, carrots & garlic, cover & cook for 10 min., cool.
  • In a large bowl mix the beef & pork, then mix in the onion, carrot & garlic. I mix the seasonings with a beaten egg then add that & the bread crumbs to the meat, try not to overmix.
  • Form into a long loaf shape & place in a greased pan, I used a 9/13 in pan. Bake at 325 for 50 minute.
  • Meanwhile make the glaze, combine the coffee, bourbon, brown sugar & soy sauce, cook over med. high heat, stir frequently until the liquid is reduced by half. Add catsup & worcestershire sauce, stir & simmer for 10 minute.
  • When meatloaf is done drain off all the liquid, liberally brush on the glaze, it says to return to the oven for 10 minute to brown, I ended up putting it under the broiler for this. Remove from oven & let rest for 10 minute before slicing. Make sure that you save enough of the glaze to put on the slices.

1/3 cup milk
3 tablespoons Worcestershire sauce
Kosher salt
1/4 cup olive oil
1 large onion, chopped

2 pounds 80/20 ground beef chuck

  • Arrange a rack in the center of the oven and preheat to 450 degrees F. Line a rimmed baking sheet with foil.
  • Whisk the eggs, milk, Worcestershire sauce and 2 teaspoons salt in a large bowl until completely combined. Heat the oil in a large skillet over medium-high heat. Add the onion, garlic, thyme, 1/2 teaspoon salt and 1 teaspoon pepper and cook, stirring occasionally, until the onions are tender and lightly golden brown, 8 to 10 minutes.
  • Add 3 tablespoons of the ketchup and cook until most of the moisture has evaporated and the mixture is thick and brick red colored, 3 to 4 minutes. Remove the skillet from the heat and let the onions cool slightly. Then add them to the beaten eggs and mix to combine.
  • Add the beef to the egg and onion mixture. Break up the meat with a fork or wooden spoon, and then mix to thoroughly combine; you don't want to see any lumps of raw beef. Add the panko and mix to combine. Stir the meat vigorously with a wooden spoon for about 7 seconds; it will become more homogenous and tackier.
  • Transfer the meat to the prepared baking sheet and shape into a 9-by-5-inch loaf. Smooth the top and evenly spread the remaining ketchup over top. Bake for 5 minutes, and then reduce the oven temperature to 350 degrees. Continue to bake until an instant-read thermometer inserted into the center of the loaf registers 150 degrees F, 30 to 35 minutes. Allow the meatloaf to rest for 20 minutes before slicing.

  • Heat oven to 325 degrees F.
  • In a food processor bowl, combine croutons, black pepper, cayenne pepper, chili powder, and thyme. Pulse until the mixture is of a fine texture. Place this mixture into a large bowl. Combine the onion, carrot, garlic, and red pepper in the food processor bowl. Pulse until the mixture is finely chopped, but not pureed. Combine the vegetable mixture, ground sirloin, and ground chuck with the bread crumb mixture. Season the meat mixture with the kosher salt. Add the egg and combine thoroughly, but avoid squeezing the meat.
  • Pack this mixture into a 10-inch loaf pan to mold the shape of the meatloaf. Onto a parchment paper-lined baking sheet, turn the meatloaf out of the pan onto the center of the tray. Insert a temperature probe at a 45 degree angle into the top of the meatloaf. Avoid touching the bottom of the tray with the probe. Set the probe for 155 degrees.
  • Combine the catsup, cumin, Worcestershire sauce, hot pepper sauce and honey. Brush the glaze onto the meatloaf after it has been cooking for about 10 minutes.

1/2 lb ground pork
1 onion, minced
1 tablespoon fresh minced garlic (or use 1-1/2 teaspoons garlic powder)

1/2 lb fresh sliced mushrooms
1 medium onion, chopped

2 tablespoons fresh parsley

Steps:

  • Set oven to 350°F.
  • Prepare a 9 x 5-inch baking pan and a baking sheet covered with foil to place underneath to catch any drippings.
  • Using clean hands mix together all meatloaf ingredients except the 1/2 to 3/4 cup ketchup and the brown sugar, until well combined in a large bowl (adding in a little more breadcrumbs if needed).
  • Pack the mixture into prepared pan.
  • Place the pan on a foil-lined baking sheet to catch any spills.
