1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
6 tablespoons warm water
1 teaspoon instant espresso powder
2 1/2 ounces unsweetened chocolate, chopped
3 tablespoons unsalted butter
2 tablespoons vegetable oil
1 1/2 teaspoons vanilla extract
2 extra-large eggs
1 1/4 cups buttermilk

Fudge Sauce
Powdered sugar
Vanilla ice cream

  • Preheat waffle iron to medium heat, following manufacturer's instructions. Pour about 1/2 to 3/4 cup batter (depending on size of waffle iron) into center of waffle iron; spread evenly with spatula. Close waffle iron and cook until waffle is cooked through but still soft and color on outside darkens, about 4 minutes (time will vary, depending on waffle iron). Using spatula, transfer waffle to rack. Repeat with remaining batter. (Can be prepared 6 hours ahead. Let waffles stand at room temperature. Before continuing, transfer to baking sheet and rewarm in 400°F oven until crisp, about 6 minutes.)
  • Stir liqueur into warm Fudge Sauce. Cut each waffle diagonally in half, forming triangles. Arrange 3 waffle triangles on each of 6 plates. Dust with powdered sugar. Tips:

  • Use fresh or frozen hazelnuts. Fresh hazelnuts have a sweeter, richer flavor, but frozen hazelnuts can be used in a pinch. If using frozen hazelnuts, thaw them completely before using.
  • Toast the hazelnuts before using. Toasting the hazelnuts will bring out their flavor and make them more fragrant. To toast hazelnuts, spread them in a single layer on a baking sheet and bake at 350 degrees Fahrenheit for 10-12 minutes, or until they are golden brown and fragrant.
  • Grind the hazelnuts finely. The finer the hazelnuts are ground, the more evenly they will be distributed throughout the waffles. You can use a food processor or a coffee grinder to grind the hazelnuts.
  • Use buttermilk in the batter. Buttermilk will make the waffles lighter and fluffier. If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk and letting it sit for 5 minutes.
  • Don't overmix the batter. Overmixing the batter will make the waffles tough. Mix the batter just until the ingredients are combined.
  • Cook the waffles on a hot waffle iron. A hot waffle iron will help the waffles cook evenly and prevent them from sticking. If your waffle iron doesn't have a temperature setting, heat it over medium-high heat.
  • Serve the waffles immediately. Waffles are best served hot and fresh. Top them with your favorite toppings, such as butter, syrup, fruit, or whipped cream.

Conclusion:

Hazelnut waffles are a delicious and easy-to-make breakfast or brunch treat. They are perfect for a special occasion or a lazy weekend morning. With a few simple tips, you can make perfect hazelnut waffles every time.
