3 eggs, room temperature (important!)
1/3 cup coconut flour
1/4 cup melted butter
1/2 teaspoon vanilla
1/4 teaspoon salt
1/4 cup splenda
1/2 teaspoon baking powder
2-5 tablespoons water (see below)
1/2 cup raspberries or blueberries

Steps:

  • Heat oven to 375° F. Prepare pan with a generous amount of butter. This recipe makes six "regular"-sized muffins. Whisk or beat the eggs until whites and yolks are well-mixed. Stream in the butter while continuing to whisk. Add salt and vanilla and mix until combined. If using liquid sweetener (preferred, as it is zero carb), add at this point. Mix the remaining dry ingredients, coconut flour, baking soda, and sweetener if using powder. Mix the dry and wet ingredients together. Now you will whisk in water, one tablespoon at a time. The coconut flour will absorb the liquid from the wet ingredients like crazy. You want to get it to a consistency that will hold up the berries, but not be too thick. I usually end up using about 4 Tablespoons of water. Gently mix in the berries and divide among 6 muffin cups. Bake for about 15 to 18 minutes, or until just turning golden on top.

Steps:

  • Preheat the oven to 350°F. Mix the cream cheese and butter together in a large bowl, then beat with a mixer on high speed until well-blended. Add the sugar to the mixing bowl and beat until fluffy; then, add the vanilla, egg whites, and egg and beat well. In a separate bowl, mix the flour, baking powder, baking soda, and salt. Then, gradually add the flour mixture and buttermilk to the cream cheese mixture while beating on low speed. Make sure to start and end with the flour mixture. Gently fold the raspberries and lemon zest into the cream cheese mixture. Place 24 cup liners in muffin cups, then spoon the batter evenly into the liners. Bake them for about 25 minutes, and test them with a toothpick in the center to make sure it comes out clean. (If not, let them bake for a few more minutes.) Enjoy!

1 1/2 sticks salted butter (3/4 cup), softened
1 tablespoon pure vanilla extract
4 large eggs
1 cup sifted coconut flour
3/4 cup whey low
1/2 teaspoon splenda
1/4 teaspoon sea salt
1/4 teaspoon baking powder
1/3 cup unsweetened cocoa powder
1/3 cup heavy cream
1/2 cup chopped pecans or walnuts

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Brush both sides of an 8" by 8" (or 11" by 7" for thinner brownies) pan with coconut oil, or spray with extra virgin olive oil cooking spray. Place a cut square of parchment paper in the bottom of the pan. Beat softened cream cheese with electric mixer until smooth. Beat in butter, vanilla, and sweetener. Whisk together dry ingredients. Add eggs one at a time to cream cheese mixture, and beat until incorporated. Add dry ingredients and heavy cream. Fold in nuts. Pour chocolate mixture into prepared pan, and smooth top with a spatula. Bake at 325 degrees for 45 minutes (40 minutes for the wider pan), until toothpick inserted in center comes out clean, and top feels firm to the touch. When done, place pan on wire rack and cool completely. Cool pan of brownies overnight in the refrigerator. Slice into 12-16 squares, and serve. Store in the refrigerator in an airtight container, or freeze cut brownies, individual wrapped in plastic and aluminum foil.

4 teaspoons baking powder
3/4 cup desiccated coconut
1/4 cup soft brown sugar
250 g frozen raspberries, slightly thawed (reserve 12 for topping)
1/4 cup white sugar
1 teaspoon vanilla essence (vanilla extract)
60 g butter, melted
2 eggs
1 cup milk
4 tablespoons shredded coconut, for topping

Steps:

  • Preheat oven to 200°C Lightly grease 12 muffin tins.
  • Sift together flour and baking powder into a bowl. Stir in coconut and soft brown sugar.
  • Place raspberries in a bowl and cover with white sugar.
  • In another bowl lightly whisk together the vanilla, melted butter, eggs and milk. Pour over raspberries.
  • Fold egg mixture into dry ingredients and stir quickly to combine.
  • Spoon mixture into prepared muffin tins, sprinkle with coconut shreds and press one raspberry into the centre of each muffin.
  • Bake for 12 - 15 minutes or until muffins spring back when lightly pressed.

2 tablespoons virgin coconut oil or butter, melted
2 tablespoons coconut milk or heavy cream
1 teaspoon splenda
1/4 teaspoon salt
2 tablespoons sifted organic coconut flour
1/4 teaspoon baking powder

Steps:

  • Blend together eggs, oil, coconut milk, sugar and salt. Combine coconut flour with baking powder and thoroughly mix into batter. Heat 1 tablespoon (I found this to be a bit much - I would use 1/2 tablespoon) of coconut oil in a skillet. Spoon batter onto hot skillet making pancakes about 2½ to 3 inches in diameter. Batter will be thick, but will flatten out when cooking.
