Time 1h5m

Yield 3 7 X 3-in loaf pans, 18 serving(s)

Number Of Ingredients 12

1 (15 ounce) can pumpkin puree
4 eggs
1 cup vegetable oil
2/3 cup water
3 cups white sugar
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/4 teaspoon ground ginger

Steps:

  • Preheat oven to 350 degrees F.
  • Grease and flour three 7x3 inch loaf pans.
  • In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended.
  • In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger.
  • Stir the dry ingredients into the pumpkin mixture until just blended.
  • Pour into the prepared pans.
  • Bake for about 50 minutes in the preheated oven.
  • Loaves are done when toothpick inserted in center comes out clean.

Tips:

  • Use fresh pumpkin puree: Fresh pumpkin puree gives the bread a more vibrant flavor and a denser texture than canned puree.
  • Don't overmix the batter: Overmixing the batter can make the bread tough. Mix just until the ingredients are combined.
  • Let the batter rest before baking: Letting the batter rest for 10 minutes before baking allows the gluten to relax, which results in a more tender bread.
  • Bake the bread until a toothpick inserted into the center comes out clean: Overbaking the bread will make it dry. A toothpick inserted into the center of the bread should come out clean when the bread is done.
  • Let the bread cool completely before slicing: Slicing the bread while it is still warm can cause it to crumble.

Conclusion:

This healthier Downeast Maine pumpkin bread is a delicious and nutritious fall treat. It is made with whole wheat flour, oats, and maple syrup, and it is packed with pumpkin flavor. The bread is also relatively low in fat and sugar, making it a healthier alternative to traditional pumpkin bread recipes.
