Time 2h45m

Number Of Ingredients 9

5 teaspoons instant yeast
2 1/2 cups plus 2 tablespoons room temperature water
6 3/4 cups bread flour
2 teaspoons salt
3 tablespoons sugar
2 tablespoons butter (melted)
2 cups walnuts (coarsely chopped)
1 1/2 cups dried cranberries
Cornmeal (for dusting baking sheets)

Steps:

  • In a large mixing bowl or the bowl of a stand mixer with a dough hook attachment, combine the instant yeast and water. Let stand for 5 to 10 minutes.
  • Add the flour, salt, sugar, and melted butter. Mix until the dough comes together, then knead for about 10 minutes by hand on a lightly floured surface or with the dough hook of the stand mixer. If needed, add more flour, in small amounts, to keep the dough from sticking to the bowl or your hands.
  • Add the walnuts and cranberries and knead them in until they are distributed throughout the dough. This is best done by hand unless you feel your mixer can handle the task.
  • Oil a large bowl. Transfer the dough to the bowl and roll over to coat all sides. Cover with plastic wrap and let it rise until doubled, about 1 hour.
  • Line 2 baking sheets with parchment paper. Sprinkle lightly with cornmeal.
  • Punch down and transfer the dough to a lightly floured surface. Divide into 2 portions and form each into tight rounds. Place on the prepared baking sheets. Cover the loaves with a lightweight kitchen towel and let rest for 45 minutes.
  • Meanwhile, preheat the oven to 350 F. Position the oven rack in the center of the oven.
  • Bake the loaves for 30 to 40 minutes, until they are nicely browned and sound hollow when tapped on the bottoms. The internal temperature will be around 195 F when done.

Tips:

  • Properly measure ingredients: Using the right amount of ingredients is crucial for a successful recipe. Invest in a good kitchen scale for precise measurements, especially for baking.
  • Choose fresh and high-quality ingredients: The quality of your ingredients directly impacts the taste of your bread. Opt for fresh cranberries, walnuts, and other ingredients to ensure the best flavor.
  • Don't overmix the batter: Overmixing can result in a dense and tough bread. Mix the batter just until the ingredients are well combined to maintain a light and fluffy texture.
  • Preheat the oven properly: A preheated oven is essential for even baking. Always preheat your oven to the specified temperature before placing the bread in.
  • Bake until a toothpick inserted into the center comes out clean: This is the best way to check if your bread is done baking. Insert a toothpick into the center of the loaf; if it comes out clean, the bread is ready.

Conclusion:

With its vibrant colors, sweet and tangy flavor, and the crunch of walnuts, cranberry walnut bread is a delightful treat that can be enjoyed for breakfast, snacks, or dessert. Whether you choose a simple recipe or one with additional ingredients like orange zest or maple syrup, the result will be a delicious and satisfying bread. So grab your apron, gather your ingredients, and embark on a culinary journey to create this irresistible treat in your own kitchen!
