1 pound russet potatoes, peeled and cut into 1 1/2-inch pieces
5 garlic cloves

HEALTHY MASHED POTATOES

Healthy Mashed Potatoes image

This is a diet version of my recipe #201988, but you won't notice any flavor missing. Hubby, who has always insisted on adding butter to his mashed potatoes, doesn't feel the need to do so with these :)

Categories     Potato

Time 30m

Yield 6-8 serving(s)

Number Of Ingredients 8

water, to cover potatoes
2 teaspoons kosher salt, for boiling
2 lbs red potatoes
4 ounces fat free cream cheese
1/2 cup low-fat milk
1 egg (optional)
fresh ground pepper
3 ounces low-fat cheddar cheese, shredded

Steps:

  • Wash potatoes and cut off any eyes. Do not peel them. Cut them in quarters and place in good sized pot. Fill with enough water to cover potatoes and add salt.
  • Bring to a boil, then simmer for 20 - 25 minutes or until tender.
  • Drain water and smash the potatoes in the pot with a potato masher.
  • Add cream cheese and half the milk and continue to smash with masher. Add egg too if desired (it adds to both the fluffy texture and a nice color).
  • Add remaining milk as needed and most of the cheddar cheese. (You might need more milk, depending on your potatoes).
  • Add pepper to taste and garnish with remaining cheddar cheese.

Tips:

* Use the right potatoes: Yukon Gold and Russet potatoes are the best choices for mashed potatoes. Yukon Golds are fluffy and have a buttery flavor, while Russets are denser and have a higher starch content, which makes them creamier. * Boil the potatoes in salted water: Salting the water helps to season the potatoes and prevents them from becoming bland. * Drain the potatoes thoroughly: Excess water will make the mashed potatoes gluey. Be sure to drain the potatoes well before mashing them. * Use a potato ricer or masher: A potato ricer will give you the smoothest mashed potatoes, but a masher will work just fine if you don't have one. * Add milk and butter gradually: Start with a small amount of milk and butter and then add more as needed until you reach the desired consistency. * Season to taste: Add salt, pepper, and other seasonings to taste. You can also add herbs, cheese, or other ingredients to create different flavor variations.

Conclusion:

Mashed potatoes are a classic side dish that can be enjoyed with a variety of meals. By following these tips, you can make the best mashed potatoes that are fluffy, creamy, and full of flavor.
