RIDICULOUSLY HEALTHY BANANA OATMEAL COOKIES

Ridiculously Healthy Banana Oatmeal Cookies image

In a bid to add to my seemingly-naughty-but-actually-very-healthy recipe collection, I invented these ridiculously healthy banana oatmeal cookies! They have no added sugar, no butter/marg and no flour in them and (considering this) taste rather magnificent if I do say so myself! I'll say it now - if you're NOT on a diet then you probably won't think so much of these. They are pretty yummy, but there are probably plenty of nicer recipes (ie. with butter and sugar) if you're not weight watching. I find these to be a really nice, healthy, filling treat though, and I hope you enjoy them too!

Provided by Wendy-Bob

Categories     Dessert

Time 30m

Yield 9 cookies

Number Of Ingredients 7

3 ripe bananas
2 cups oats (not instant, the proper scotts type)
1/2 cup skim milk
1 egg
2 tablespoons Splenda sugar substitute
1/2 teaspoon vanilla extract
1 tablespoon low-fat peanut butter (optional)

Steps:

  • Preheat the oven to 180c.
  • Mash the bananas and mix with the oats, milk and egg before adding the remaining ingredients (it just mixes a bit easier and more evenly this way). These measurements make the mixture just the right consistency for my liking, but if it looks a bit runny to you at this point, throw in another handful of oats to thicken it up.
  • Grease a cookie tray with 1 cal spray and spoon the mixture on to make around 9 large cookies.
  • Bake for around 20mins until golden brown.

HEALTHY OATMEAL/RAISIN COOKIES

Healthy Oatmeal/Raisin Cookies image

My husband loves oatmeal cookies, so I have created a low fat, low sugar recipe. The addition of raisins adds more sweetness.

Provided by janselstad

Categories     Drop Cookies

Time 30m

Yield 24-30 cookies

Number Of Ingredients 12

1/2 cup brown sugar
2 egg whites
2/3 cup applesauce (unsweetened)

1/2 teaspoon salt (optional)
1 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
1 1/2 cups old fashion oatmeal
2/3 cup raisins
1/2 cup walnuts (optional)

Steps:

  • Mix brown sugar thru vanilla together.
  • Add flour, soda, salt, cinnamon, nutmeg.
  • Stir in oatmeal, raisins& walnuts.
  • Drop on cookie sheets which have been sprayed or I use parchment paper.

HEALTHY OATMEAL, DATE AND CHOCOLATE CHUNK COOKIES

Healthy Oatmeal, Date and Chocolate Chunk Cookies image

These cookies don't taste "healthy," which makes them the perfect way to avoid breaking any eat-better resolutions. Toasting the oats before adding them to the batter helps maintain their chewy texture, even after baking.

Provided by Food Network Kitchen

Categories     dessert

Time 50m

Yield About 30 cookies

Number Of Ingredients 11

1 1/2 cups rolled oats
2/3 cup packed dark brown sugar
6 tablespoons unsalted butter, at room temperature
1 large egg
1 teaspoon vanilla extract
3/4 cup whole wheat pastry flour or white whole wheat flour
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon fine salt
3/4 cup chopped pitted dates
1/2 cup semisweet chocolate chunks

Steps:

  • Position racks in the upper and lower thirds of the oven and preheat the oven to 350 degrees F.
  • Spread the oats out on a baking sheet and bake until light golden brown, 10 to 12 minutes. Reserve 1/4 cup of the oats for sprinkling and transfer the remaining oats to a medium mixing bowl to cool. Line two baking sheets with parchment paper.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the sugar and butter on medium-high speed until lighter in color and slightly fluffy, about 5 minutes, scraping down the sides of the bowl several times. Beat in the egg and vanilla until very fluffy, 2 to 3 minutes more.
  • In the mixing bowl with the cooled oats, add the flour, cinnamon, baking powder and salt, and mix to combine. Reduce the mixer speed to low, then add the flour mixture to the butter and beat until just combined. Stir in the dates and chocolate by hand.
  • Drop level tablespoons of the dough on the baking sheets, leaving at least 1-inch of space around each cookie, about 30 cookies total. Sprinkle the cookies with the reserved toasted oats. Bake until the cookies are lightly golden, 12 to 15 minutes. Cool the cookies for 5 minutes on the baking sheets, then transfer to cooling racks to cool completely.

HEALTHY OATMEAL RAISIN COOKIES WITH HONEY

Healthy Oatmeal Raisin Cookies With Honey image

These little cookies are almost too healthy to even call a cookie! More like a nutritional supplement!!!

Provided by carlyandlee

Categories     Dessert

Time 40m

Yield 30 cookies, 30 serving(s)

Number Of Ingredients 14

1 cup whole wheat flour
1 1/2 cups rolled oats
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon cinnamon (or more as desired)
1/2 teaspoon nutmeg (optional)
1/2 cup honey
1/2 cup oil (corn, grapeseed or olive)
1 tablespoon molasses
1 egg (beat with 1 Tbsp Water)
1 teaspoon vanilla
1/2 cup raisins
1/2 cup walnuts

Steps:

  • 1.In a large bowl, mix all the dry ingredients together.
  • 2.In a medium bowl, mix all the wet ingredients together. Hint: when measuring out the honey, spray the measuring cup with oil or baking spray--your honey won't stick).
  • 3.Mix the wet stuff with the dry stuff. Add the raisins and walnuts and mix. If the mixture seems too wet, add a bit of flour. If it isn't binding together very well, you may wish to add an egg white.
  • 4.COOL the mix for 20 minutes in the fridge.
  • 5.Preheat the oven to 335 degrees (lower temperature due to the honey in the recipe which will burn more easily).
  • 6.Drop by teaspoonfuls onto your baking sheet (I recommend lining the baking sheet with parchment paper). Press down with a fork to ensure even cooking.
  • 7.Bake for about 15 - 20 minutes or until golden on the bottom of the cookie. The cookies freeze very well and make a great snack! Enjoy.

HEALTHY CHEWY OATMEAL, RAISIN, PECAN COOKIES

Healthy Chewy Oatmeal, Raisin, Pecan Cookies image

This is a healthy low-calorie version of my original recipe. This recipe uses lower calorie ingredients such as Splenda Sweetener, Splenda Brown Sugar, and wheat flower. These cookies are plump, chewy, and full of crunchy pecans and raisins. The honey really sets if off with a unique taste. Once you make these cookies with the honey in them, you will never want to make oatmeal cookies without honey ever again! And it can be easily altered to your liking by changing the add-ins from raisins & pecans, to just about anything you want (walnuts, dates, dried cranberries, etc).

HEALTHY WALNUT (OR CHOCOLATE) CRANBERRY OATMEAL CHEWY COOKIES

Healthy Walnut (Or Chocolate) Cranberry Oatmeal Chewy Cookies image

These are such unique cookies! These cookies become very thin when they cook, and the addition of brown rice syrup (better for you then sugar... has complex carbs to keep you fuller longer) makes the cookie very chewy and almost slightly sticky. You have never tasted anything like it!

Provided by I Cant Believe Its

Categories     Drop Cookies

Time 1h15m

Yield 24 serving(s)

Number Of Ingredients 14

1/3 cup margarine
1 tablespoon smooth applesauce
2/3 cup brown rice syrup
2 egg whites
1/2 cup firmly packed brown sugar
1/2 teaspoon vanilla extract
1/2 cup all-purpose flour
1/2 cup whole wheat flour
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup rolled oats, quick cooking
3 -4 tablespoons chopped walnuts or 3 -4 tablespoons miniature chocolate chips
3 -3 1/2 tablespoons craisins (or raisins)

Steps:

  • In a dry saucepan on medium, toast the walnuts (if using) and oats together until browned and fragrant, stirring occasionally. Set aside.
  • In a large bowl, beat margarine(at room temp) and applesauce with brown sugar until light and fluffy (with electric beaters).
  • add egg whites, brown rice syrup, and vanilla and beat until smooth, about a minute.
  • In a smaller bowl, combine flours, cinnamon, baking soda, and salt.
  • Mix into creamed mixture. Stir in oats, walnuts (or chocolate chips), and craisins.
  • Chill dough for 30 minutes.
  • Drop dough on parchment paper-covered cookie sheet (dont flatten tops).
  • Bake at 330° F 12-15 minutes or until spread out and very lightly browned. They will be flat and the tops will have small bubble pockets, and though they may look soft and not done, they are! Allow cookies to cool slightly then place cookies on cooling rack. Use a very good spatchula or else they will be tricky to get off the pan without breaking!
  • Cookies will be quite delicate and slightly sticky (especially when hot), so when you store them, be sure their edges arn't touching eachother and use wax paper to line between the layers. ENJOY!

HEALTHY PUMPKIN OATMEAL COOKIES

Healthy Pumpkin Oatmeal Cookies image

from Her Sports magazine. I ran out of rolled oats, so I used 1 cup rolled and 2 cups quick oats. Also substituted pumpkin spice mix for all the other spices and fresh pumpkin puree for canned pumpkin. I added only --1/2 cup raisins and added --1/4 cup chocolate chips. These came out a tad dry (as there is no fat in them) so adding a little oil could go a long way, though I haven't tried it. I baked for 8 min, rotated, and baked 8 more minutes. I will do slightly less next time. Also, they do not grow at all when baking, so the size you make them is the size the will end up. Mine were about 2 inches in diameter.

I created this recipe with my daughter after a conversation with my sister, Meagan, about her idea of a perfect oatmeal cookie. This is a cookie you can feel good about giving your kids. They are very moist and fluffy and taste even better the days after being baked. OATMEAL HEALTHY COOKIES (SAVOURY)

Oatmeal Healthy Cookies (Savoury) image

Bake this savoury cookies on a cookie sheet lined with baking paper. I use an ice cream scoop (1/4 cup volume) so that they all come even. You will get 14 cookies. Make sure to flatten each one before baking. They are just yummy. They have no flour and no dairy. You can make the same type of cookies, but instead of adding savoury spices, I add apple sauce (unsweetened), cinnamon, nutmeg, vanilla extract and splenda to taste. I also switch the carrot for shredded apples. You can also add chopped almonds, nuts or hazelnuts if you like. They are very healthy, high in fibre and low in fat.

Time 50m

Yield 14 cookies, 14 serving(s)

Number Of Ingredients 13

1 cup instant oatmeal
2 cups oat flour (I grind up 3 minute oatmeal and it is just as good)
1 teaspoon salt
1/2 teaspoon sugar
2 tablespoons ground flax seeds
1 tablespoon chia seeds (optional)
1 tablespoon baking powder
1 teaspoon ground rosemary
1 tablespoon finely chopped fresh dill
3 medium carrots, grated
1 egg
1 cup water
4 tablespoons canola oil

Steps:

  • Preheat oven to 375 degrees F.
  • Mix all dry ingredients in a bowl.
  • Mix all wet ingredients in a 2 cup measuring glass container.
  • Add the wet ingredients to the dry ingredients and mix with a fork until even consistency is reached.
  • Add the grated carrots and incorporate into the mixture.
  • Use a 1/4 cup ice cream scoop and place each cookie onto a cookie sheet that has been lined with baking paper.
  • You will get 14 cookies. Make sure to flatten each cookie with a fork lightly so that they will all be the same thickness and they will cook evenly.
  • Bake cookies for 20 minutes in a preheated 375 F oven. Lower the temperature of the oven to 350 F and bake an additional 20 minutes -- or until cooked though.
  • Place baked cookies on a wire rack and let them cool for 10 minutes.

Its been ages since I made cookies. I usually sample what I make and hubby eats the rest :) I usually make them crispy since those are his favourites. These ones are loaded with healthy goodies.

Time 25m

Number Of Ingredients 15

1/4 c earth balance margarine
1/2 c packed brown sugar
1/3 c coconut sugar (or plain white sugar)
1 tsp ground cinnamon
1/2 tsp baking soda
1/8 tsp sea salt
1 large organic egg (at room temperature)
1 tsp vanilla extract
3/4 c spelt flour (or all purpose)
3/4 c rolled oats
1/4 c flax seed meal
1/4 c wheat germ
2-oz dark chocolate, finely chopped
1/4 c dried cranberries or currants
1/4 c chopped hazelnuts or walnuts, toasted

Steps:

  • 1. Preheat your oven to 350'F
  • 2. Using a large electric mixer, add the earth balance to the bowl and on medium high mix for 30 seconds. Add the brown sugar, coconut or plain sugar, cinnamon, baking soda, and salt. Beat until combined scraping the bowl as you go.
  • 3. Beat in the egg, vanilla until combined. Beat in the flour, and stir in the rolled oats, flax seed meal, wheat germ, chocolate, cranberries and walnuts. The dough will be sticky and thick.
  • 4. Drop by teaspoons onto an "UNGREASED" cookie sheet. I have a gold coloured one. It's very heavy but works like a charm as nothing sticks to it. Space the cookies 2" apart, they spread.
  • 5. Bake for 9-11 minutes (I did mine for 10). They should be lightly browned on the top. Let the cookies cool for a minute then transfer to a wire rack. Makes around 3 dozen crispy cookies. Enjoy!

Tips:

  • Use ripe bananas. The riper the bananas, the sweeter and more flavorful your cookies will be. You can also use overripe bananas, which are even sweeter and have a more intense flavor.
  • Mash the bananas thoroughly. This will help to ensure that your cookies are smooth and evenly textured. You can use a fork or a potato masher to mash the bananas.
  • Use old-fashioned oats. Old-fashioned oats will give your cookies a chewier texture than quick oats or instant oats. If you only have quick oats or instant oats, you can use them, but your cookies will be less chewy.
  • Add mix-ins to your cookies. Chocolate chips, nuts, and dried fruit are all popular mix-ins for oatmeal cookies. You can also add spices, such as cinnamon or nutmeg, to flavor your cookies.
  • Bake your cookies until they are golden brown. The baking time will vary depending on the size of your cookies and the temperature of your oven. Keep an eye on your cookies while they are baking so that you don't overbake them.

Conclusion:

Oatmeal cookies are a classic treat that can be enjoyed by people of all ages. They are easy to make and can be customized to suit your own taste. With a few simple tips, you can make delicious oatmeal cookies that will be a hit with your family and friends.
