HEALTHY WALNUT CHICKEN

Healthy Walnut Chicken image

I made this last night for guests and everyone loved it. I didn't include the marinating time, but it's best to let the chicken marinate all day in the buttermilk. I buy the walnuts already finely diced, but if you are going to chop them yourself, they need to be very fine but not ground. Inspired by PaulaG's recipe #137096.

Time 45m

Yield 6 chicken breasts, 6 serving(s)

Number Of Ingredients 8

6 boneless skinless chicken breasts
1 cup buttermilk
1 cup flour
1 cup finely diced walnuts
1 tablespoon paprika
1/2 teaspoon kosher salt
1/8 teaspoon fresh ground pepper
butter flavored Pam cooking spray

Steps:

  • Preheat oven to 375 degrees and spray baking pan with pam.
  • Place chicken in large ziplock bag and pour buttermilk in bag. Squish bag a bit to make sure chicken is evenly covered by the buttermilk. Place in fridge to marinate for several hours.
  • Combine breading ingredients. Taste and adjust seasoning to your liking.
  • Take chicken breasts, one at a time and dip both sides in breading, then place in pan.
  • Liberally spray top of chicken with pam, until they are golden in color. (This helps them brown without having to add butter or oil.).
  • Bake for 30-35 minutes or until done. Baking time will depend on the size of the chicken breasts.
  • When serving, to help the bottom breading stay on the chicken, use a spatula and a table knife. Carefully slide the spatula under the chicken, then use the knife to push the chicken off the spatula. That will help the breading stay in place rather than sticking to the pan or to the spatula.

non-stick cooking spray
1 ½ cups cornflakes cereal
1 cup walnut pieces
½ teaspoon garlic powder

WALNUT-CRUSTED CHICKEN BREAST

Walnut-Crusted Chicken Breast image

I almost never order a nut-crusted entree in a restaurant, as they often feature a sugary glaze or a too-sweet nut, like pecan or macadamia. That's not an issue here since we're going with buttery, subtly bitter walnuts, held on with a very savory 'nut glue,' made with a garlic and mustard base. This protective layer of deliciousness makes boneless, skinless chicken breast taste like it was just carved off a freshly roasted carcass.

Time 2h25m

Yield 4

Number Of Ingredients 10

5 cloves garlic, crushed
3 tablespoons Dijon mustard, divided
2 teaspoons fresh thyme
2 (8 ounce) skinless, boneless chicken breast halves
salt and freshly ground black pepper to taste
cayenne pepper to taste
1 ½ cups finely chopped walnuts
1 tablespoon olive oil, or to taste
½ cup chicken broth
2 teaspoons honey

Steps:

  • Mix garlic, 2 tablespoons Dijon mustard, and thyme together in a bowl to make the "nut glue."
  • Season chicken breasts generously with salt, pepper, and cayenne. Spread nut glue all over the chicken. Refrigerate until ready to use.
  • Toss walnuts over the chicken, press down firmly, and repeat on the other side to coat thoroughly. Refrigerate for 1 1/2 to 3 hours.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Coat the bottom of an oven-proof skillet with some olive oil. Place chicken breasts on top, reserving excess nuts if desired. Season with a pinch of salt and drizzle more olive oil on top.
  • Bake in the center of the preheated oven until walnuts are lightly toasted and an instant-read thermometer inserted into the thickest part of a breast reads 150 degrees F (66 degrees C), about 25 minutes.
  • Quickly remove chicken to a plate to rest. Transfer skillet to the stovetop; stir in broth, 1 tablespoon Dijon mustard, and honey and bring to a boil over high heat; cook until reduced by about half, 3 to 4 minutes. Spoon pan sauce over and around the chicken to serve.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make a big difference in the taste of your walnut chicken. Look for plump, juicy chicken breasts, crisp-tender walnuts, and a good-quality soy sauce.
  • Don't overcook the chicken: Chicken breasts can quickly become dry and tough if they're overcooked. Cook them over medium heat until they're cooked through but still tender and juicy.
  • Toast the walnuts: Toasting the walnuts brings out their flavor and makes them more fragrant. Toast them in a dry skillet over medium heat until they're golden brown and fragrant.
  • Use a flavorful sauce: The sauce is what really makes this dish special. Use a combination of soy sauce, honey, rice vinegar, and ginger to create a sweet, savory, and slightly tangy sauce that coats the chicken and walnuts.
  • Serve over rice: Walnut chicken is traditionally served over rice. This helps to soak up the delicious sauce and makes it a more complete meal.

Conclusion:

Walnut chicken is a delicious and versatile dish that can be enjoyed for lunch, dinner, or even as an appetizer. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a satisfying and flavorful meal, give walnut chicken a try. You won't be disappointed!
