1/2 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
1 1/2 cups peeled cored & finely chopped apples, such as jonathan or granny smith
1/4 cup fat-free liquid egg product
3/4 cup sugar
1/2 cup chopped walnuts or 1/2 cup pecans
1/4 cup applesauce
1 tablespoon flour
1 tablespoon whole wheat flour
1/2 teaspoon cinnamon
1 tablespoon butter
1/4 cup walnuts or 1/4 cup pecans
1/4 cup brown sugar

Steps:

  • Lightly coat a 9-inch baking pan with cooking spray; set aside.
  • In a medium bowl combine the 2/3 cup flour, 1/2 cup whole flour, soda, 1 teaspoon cinnamon, and salt, set aside.
  • In a large mixing bowl toss together the chopped apple and egg product; stir in the 3/4 cup sugar, the 1/4 cup nuts and applesauce;Add flourmixture and stir JUST until combined.

1 cup raisins
1/2 cup chopped pecans
1/4 cup olive oil or 1/4 cup vegetable oil
2 teaspoons vanilla
1 egg, beaten
2 1/2 cups unbleached flour
1 1/2 teaspoons baking soda
2 teaspoons cinnamon

Steps:

  • Combine apples with sugar, raisins, and pecans; let stand half an hour.
  • Stir in oil, vanilla, and egg.
