HAMBURGER STEW WITH CABBAGE

Hamburger Stew with Cabbage image

I grew up in Kansas City, where my parent's would go to Shoney's once a week. They had an all-you-can-eat soup and salad bar and it was the highlight of my week. Even as a kid, I've always loved soup. Then we moved out of state. Even though it has been nearly 40 years since I last had it, I never forgot about their beef and cabbage soup. I decided to recreate it based off my memory and here is what I came up with. Enjoy!

Time 1h20m

Yield 14 serving(s)

Number Of Ingredients 11

1 1/2 lbs ground beef
4 celery ribs, chopped
1 medium onion, chopped
7 cups chopped cabbage
2 (16 ounce) cans kidney beans, rinsed and drained
1 (28 ounce) can diced tomatoes, undrained
3 cups beef broth
1 (15 ounce) can tomato sauce
2 medium carrots, chopped
1/2 teaspoon sugar
pepper

Steps:

  • In a large saucepan, cook the beef, celery and onion and drain.
  • Add the remaining ingredients and bring to a boil.
  • Reduce heat, cover and simmer for 1 hour or until cabbage and carrots are tender.

Tips:

  • Choose the right cabbage: For this stew, it's best to use a firm, compact head of green cabbage. Avoid heads that are loose or have brown or yellow leaves.
  • Prepare the cabbage properly: Before adding the cabbage to the stew, remove the outer leaves and core. Then, cut the cabbage into 1-inch pieces.
  • Brown the meat and vegetables: Browning the meat and vegetables before adding them to the stew helps to develop flavor and depth of color. Be sure to brown the meat in small batches so that it doesn't overcrowd the pan and steam instead of browning.
  • Use a variety of vegetables: In addition to cabbage, this stew also includes potatoes, carrots, celery, and onion. You can also add other vegetables that you like, such as green beans, peas, or corn.
  • Season the stew well: Be sure to season the stew generously with salt and pepper. You can also add other spices and herbs to taste, such as garlic powder, onion powder, paprika, or thyme.
  • Simmer the stew until the vegetables are tender: The stew should simmer for at least 30 minutes, or until the vegetables are tender. This will allow the flavors to meld and develop.

Conclusion:

Cabbage Patch Stew is a hearty and flavorful stew that is perfect for a cold winter day. It's made with simple ingredients that you probably already have on hand, and it's easy to make. So next time you're looking for a comforting and delicious meal, give Cabbage Patch Stew a try.
