SPICY LENTIL AND SAUSAGE SOUP
This hearty soup is peppered with spicy sausage, ground spices and dried herbs, and fresh basil. The lentils are the perfect vehicle to carry the robust flavors from the red wine and hot sauce, and the tomato sauce ties everything together. This soup is rather spicy, so feel free to omit the hot sauce if you'd like to reduce the heat. The sausage can be substituted with vegan sausage or omitted altogether.

Tips:
- Use high-quality ingredients: The better the ingredients, the better the soup will be. Choose fresh, flavorful vegetables, a good quality sausage, and a rich broth.
- Don't skimp on the spices: Spices are what give lentil soup its distinctive flavor. Be generous with the cumin, coriander, and paprika.
- Cook the lentils until they are tender but not mushy: Lentils should be cooked until they are soft, but they should still hold their shape. Overcooked lentils will become mushy and ruin the texture of the soup.
- Add the sausage at the end of the cooking time: This will prevent the sausage from becoming dry and tough.
- Serve the soup with a variety of toppings: Some popular toppings for lentil soup include crusty bread, grated cheese, sour cream, and chopped fresh herbs.
Conclusion:
Lentil and sausage soup is a hearty, flavorful, and satisfying meal that is perfect for a cold winter day. It is also a relatively inexpensive and easy-to-make dish, making it a great option for busy families. With a few simple tips, you can make a delicious and comforting lentil and sausage soup that your family will love.
