2 ¼ cups rolled oats
2 ½ cups buttermilk
1 ½ cups all-purpose flour
¾ cup whole wheat flour
⅓ cup white sugar
1 ½ teaspoons baking powder
1 ½ teaspoons baking soda
¾ teaspoon salt
¾ teaspoon ground cinnamon
3 eggs
¾ cup milk, or more as needed

Steps:

  • Mix the rolled oats and buttermilk together in a large bowl; allow to soak 15 minutes.
  • Whisk the all-purpose flour, whole wheat flour, sugar, baking powder, baking soda, and salt together in a separate large bowl.
  • Beat the eggs and milk together in a separate small bowl; mix into the soaked oats. Stir the flour mixture into the oat mixture. If the batter seems dry, add milk about 1 tablespoon at a time until the desired consistency is achieved.
  • Grease a skillet or griddle and place over medium heat. Ladle about 1/2 cup of batter per pancake onto your preheated cooking surface. Cook until the pancake is lightly golden brown, about 2 minutes, flip, and continue cooking to brown other side, another 1-2 minutes.

1 cup quick-cooking oats
1/2 cup all-purpose flour
1/2 cup whole wheat flour
1 tablespoon sugar
1 teaspoon baking powder

2 cups buttermilk
2 tablespoons canola oil
1 teaspoon vanilla extract

1/2 cup whole wheat flour
1 tablespoon sugar
1 teaspoon baking powder

1/4 teaspoon salt (I didn't use it)
1 egg, lithly beaten
2 cups buttermilk (I used 1 1/4 cup skim milk and 3/4 cup 2% fat milk with 2 tablespoon vinegar and let it rest 5 minut)
2 tablespoons canola oil
1 teaspoon vanilla extract
assorted berries (optional)

1 c whole wheat flour
1/4 c wheat germ
1/4 c nonfat powdered milk
1 tsp baking soda
1/4 tsp kosher salt
1/2 tsp cinnamon
1 Tbsp brown sugar
2 eggs
2 c buttermilk
1/4 c butter, melted and cooled

Steps:

  • 1. In a large bowl, whisk together oats, flour, wheat germ, powdered milk, baking soda, salt, cinnamon, and brown sugar.
  • 2. In a medium bowl, stir together, eggs, buttermilk, and melted butter.
  • 3. Stir wet ingredients into the dry ingredients until well blended.
  • 4. Lightly grease a griddle and heat until hot. Pour 1/2 cup of the batter onto the hot griddle (batter will be thick). Cook pancakes until the edges are dry and bubbles appear on the surface. Turn and cook other side.

Tips:

  • For fluffier pancakes, separate the egg yolks and whites and beat the whites until stiff peaks form. Then, gently fold the whites into the batter.
