1/2 pound turkey Italian sausage links, casings removed
1 large onion, chopped
2 garlic cloves, minced
3/4 cup chopped carrots
1 fennel bulb, chopped
1/3 cup chopped celery
1 can (14-1/2 ounces) reduced-sodium chicken broth
3 medium tomatoes, peeled, seeded and chopped
1 teaspoon dried basil
1 teaspoon dried oregano
1/4 teaspoon salt
1 cup uncooked small pasta shells
1 can (15 ounces) navy beans, rinsed and drained
1/2 cup shredded Parmesan cheese

Steps:

  • In a Dutch oven, cook sausage and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Add the carrots, fennel and celery; cook until vegetables are softened. , Stir in the broth to loosen any browned bits from pan. Add tomatoes, basil, oregano and salt. Bring to a boil. 1/4 lb sweet Italian sausage
1 tablespoon butter
1/4 cup chopped onion
1 garlic clove, minced. (or you can use 1/4 tsp. of crushed garlic)
1 1/2 cups crushed tomatoes, in thick sauce
2 teaspoons chopped fresh oregano (2/3 tsp. dried)
2 teaspoons chopped fresh basil (same, 2/3 tsp dried)
1/2-1 cup water (optional)

Steps:

  • You may want to cook sausage ahead of time.
  • Brown and drain sausage. Set aside.
  • Saute onion and garlic in butter untill onion is translucent.

1/2 pound fresh kielbasa or Polish sausage links
1/2 pound Italian sausage links
1 medium onion, chopped
1 medium green pepper, chopped
3-1/2 cups beef broth
1 can (14-1/2 ounces) diced tomatoes, undrained
1 cup apple juice
1 tablespoon minced fresh parsley
1 garlic clove, minced
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
4 ounces uncooked spiral pasta

Steps:

  • In a large saucepan, cook sausages over medium heat until a thermometer reads 160°. Remove with a slotted spoon; drain, reserving 2 tablespoons drippings. 1 (15 ounce) can kidney beans, drained and rinsed
1 (15 ounce) can white beans, any variety, drained and rinsed
1 cup uncooked macaroni

12 small new potatoes, cut into halves
2 tablespoons olive oil
4 carrot, (7-1/2")s carrots, sliced
1 onion, cut into thin wedges
1 cup chopped celery
2 cloves garlic, minced
16 ounces fresh mushrooms, cut into halves
2 (14.5 ounce) cans diced tomatoes, undrained
1 (8 ounce) can tomato sauce
1 tablespoon dried oregano
½ teaspoon ground black pepper

Steps:

  • Cut kielbasa into 1/2" slices; set aside. Cook potatoes in a medium pan of boiling water until just barely tender, about 10 minutes; drain and set aside.
