My mom picked up this barley soup recipe in her fitness class and passed it to me. It's loaded with goodness! Sometimes, I substitute ground turkey as the meat and use chicken bouillon instead of beef flavored.-Emily Melton, Prophetstown, Illinois

Time 1h15m

Yield 15 cups, 15 serving(s)

Number Of Ingredients 10

1 (40 g) package onion soup mix
1 (15 ounce) can black beans
1 (5 ounce) can tomato paste
1 1/2 cups carrots
3/4 cup barley
3/4 cup celery
1 cup frozen corn
1 cup frozen mixed vegetables
8 cups water
salt and pepper

Steps:

  • In a large saucepan or stock pot, dissolve the onion soup mix in the water.
  • Add each of the other ingredients and stir well.
  • Bring to a boil and then turn down to low heat.
  • Simmer covered for a minimum of 1 hour to allow barley to cook.
  • Serve immediately. Great reheated as well.

Tips:

  • Use a variety of vegetables. This will give your soup a more complex flavor and texture. Some good choices include carrots, celery, onions, potatoes, and tomatoes.
  • Don't be afraid to experiment with different herbs and spices. A few well-chosen herbs and spices can really elevate the flavor of your soup. Some good options include thyme, rosemary, oregano, basil, garlic, and pepper.
  • Cook the barley until it is tender but still has a little bit of a bite to it. Overcooked barley will be mushy and unpleasant.
  • Season the soup to taste. This means adding salt, pepper, and other spices until the soup reaches your desired flavor. Be careful not to over-season, as you can always add more but you can't take it away.
  • Serve the soup hot with a side of bread or crackers. This will help to soak up the delicious broth.

Conclusion:

Hearty vegetable barley soup is a delicious and nutritious meal that is perfect for a cold winter day. It is easy to make and can be tailored to your own personal preferences. So next time you are looking for a warm and comforting meal, give this soup a try. You won't be disappointed!
