This is another of my friend Heather's treats. A delicious mango bean salsa. This is so good, light and refreshing. It tastes best when refrigerated for an hour or two but may be eaten after 15 minutes.

Time 35m

Yield 6-8 serving(s)

Number Of Ingredients 12

1 red onion, diced
1 mango, peeled, pitted & diced
1/2 avocado, peeled, pitted & diced (optional)
1/2 sweet red pepper, diced
1/2 cup frozen sweet corn, thawed
1/2 cup black beans, rinsed & drained
1/4 cup stuffed green olive, diced (optional)
1/8 cup carrot, sweet. shredded (optional)
2 tablespoons fresh lime juice
1/4 teaspoon coarse sea salt
1/8 teaspoon black pepper, freshly ground
1 -2 tablespoon fresh cilantro, chopped fine

Steps:

  • In a medium bowl, combine the onion, mango, avacado, red pepper, corn, beans, olives, carrotes, lime juice, salt and pepper.
  • Let stand 10 - 15 minutes to allow the flavors to blend.
  • Stir in cilantro and enjoy with your favorite chips.

Tips:

  • Fresh ingredients make all the difference in this salsa. Use ripe, juicy tomatoes, crisp bell peppers, and sweet corn. If you can't find fresh cilantro, use dried cilantro instead, but be sure to use less since it is more concentrated.
  • Don't overcrowd the salsa. Chop the vegetables into small pieces so that they can evenly distribute the flavors.
  • Let the salsa sit for at least 30 minutes before serving to allow the flavors to meld.
  • Serve the salsa with tortilla chips, tacos, burritos, or grilled chicken or fish.
  • If you want a spicier salsa, add a minced jalapeño pepper or cayenne pepper to taste.

Conclusion:

This cilantro black bean and corn salsa is a delicious and versatile condiment that is perfect for any occasion. It is easy to make, packed with flavor, and can be used in a variety of dishes. Whether you are serving it with tortilla chips as a snack or using it as a topping for tacos or burritos, this salsa is sure to be a hit.
