Steps:
- Place ground turkey in a medium mixing bowl along with the basil, onion, egg, smoked paprika, cumin, garlic powder, salt, pepper and applesauce. Stir ingredients with a fork and/or clean hands until the spices and herbs are well blended with the meat.
- Divide the meat into 4 patties (or 6-7 patties if you are making slider-sized burgers). The patties may initially seem overly soft, but will firm up as they cook.
- If cooking on stovetop in a nonstick skillet or grill pan, grease the pan with 2 tbsp olive oil, reserving 1 tbsp olive oil for basting. Heat the oil over medium until hot. Place the patties gently in the pan.
- Cook over medium heat for 10-15 minutes, flipping every 3 or 4 minutes and basting with olive oil periodically.
- You may need to adjust the heat a little lower once the burgers are browned to your liking, to avoid overcooking the outside of the patties. Use a meat thermometer to test for doneness (165 degrees F in the center of the thickest part of the patty). As soon as they reach 165 or higher, remove from heat to avoid overcooking - you don't want your burgers to turn out dry.If grilling, grease the preheated grill well before you start cooking. Grill over medium flame using the same instructions as above. Whether cooking on the stovetop or the grill, I like to baste the burgers with olive oil periodically to keep them nice and moist.
- Serve these Mediterranean Turkey Burgers with or without buns. We usually enjoy these without bread, and serve them with side salads and mezze instead.

Steps:
- Sauté the onions and garlic: Sauté the chopped onion in olive oil for 3 minutes over medium heat. Add the garlic and sauté for another 2 minutes, or until the garlic begins to brown. Remove from heat. Transfer the onions, garlic, and oil to a large bowl to cool down.
- Make the burger mix: Once the onions are cool to the touch, add the ground turkey, salt, pepper, and herbs into the bowl. Using your hands, gently mix everything until well combined. You want the herbs mixed in without overworking the meat (which would make the burgers tough).
- Form the meat into patties: Use your fingers to form a slight indentation in the middle of the patties. When burgers cook, the meat contracts from the edges. If the middle part is slightly thinner than the edges it will help the patties finish with a more even shape and less of a bulge in the middle.
- Cook the burgers: Cook on a hot grill or in a hot cast iron frying pan for 5 to 6 minutes per side, until cooked through (165°F if using a meat thermometer). If using a grill , first pre-heat the grill on high for 10 minutes and coat the grates with a little vegetable oil. If using a frying pan , put a little oil in the pan first to help keep the burgers from sticking. A trick my mother uses when making burgers in a cast iron frying pan is to sprinkle the bottom of the pan with a little salt. The salt acts sort of like ball bearings, keeping the patties from sticking when you go to flip them.
- Serve the burgers: Toast the buns and serve the burgers with the accompaniments of your choice-sliced onions, lettuce, sliced tomatoes, bacon, mayonnaise (especially good with mayo), mustard, relish, and/or ketchup.

HERB-AND-CITRUS TURKEY BURGERS
A well balanced blend of herbs and citrus make for a wonderful variation on the turkey burger. For those like me who love bold flavors, there may be a temptation to increase the herbs. Don't, as it does not improve the burger, rather it takes the seasonings out of balance. Instead you might try replacing the black pepper with some crushed red pepper. My suggested condiments are fresh tomatoes, grilled red onion slices and some Dijon mustard. Based on a recipe from Cooking Light 2000. WW 4pts per burger.

Steps:
- Combine first 6 ingredients in a large bowl until blended. (Do not overwork meat mixture.) Shape mixture into 4 (5-inch) patties.
- Grill, covered with grill lid, over medium-high heat (350 to 400 degrees) 5-6 minutes on each side or until done.
- Scoop out the soft centers from bottom half of rolls, leaving 1/4 inch-thick shells. Place burgers in shells; top evenly with spinach and tomato slices, and cover with roll tops.
Tips:
- Use fresh herbs: Fresh herbs will give your turkey burgers the best flavor. If you don't have fresh herbs on hand, you can use dried herbs, but be sure to use half the amount called for in the recipe.
- Don't overmix the meat: Overmixing the meat will make the burgers tough. Just mix the ingredients until they are combined.
- Cook the burgers over medium heat: Cooking the burgers over medium heat will help them cook evenly and prevent them from drying out.
- Use a meat thermometer to check the burgers for doneness: The burgers are done when they reach an internal temperature of 165 degrees Fahrenheit.
- Let the burgers rest before serving: Letting the burgers rest for a few minutes before serving will help them retain their juices.
Conclusion:
Turkey burgers are a delicious and healthy alternative to beef burgers. They are packed with flavor and can be easily customized to your liking. Experiment with different herbs and spices to create your own unique turkey burger recipe. Serve them on a bun with your favorite toppings, or enjoy them wrapped in lettuce leaves for a low-carb option.
