BASIC HERB MARINADE AND SALAD DRESSING
This is a wonderful fresh salad dressing and marinade. The use of the herbs helps the marinade 'cling' to the vegetables making it ideal for grilled veggies. The recipe makes enough marinade or dressing for 1 to 1 1/2 lbs of vegetables. This is another recipe from Andrea Chesman's The Vegetarian Grill, a cookbook I can't recommend highly enough.

- First, make the dressing. In a blender, purée the tomatoes, nuts, garlic, lemon juice, olive oil, and salt for 45 seconds, until the mixture is thick and creamy. Transfer the contents to a small bowl and stir in the minced pickles. Set it aside. (Any extra dressing can be stored in the fridge for up to three days.)
- To prepare to garnish, heat the coconut oil in a skillet set over medium-high heat. Sauté the onions until they are slightly caramelized, then set them aside.
- For the burgers, in a food processor purée the chicken, onion, and garlic until everything is well combined. Transfer it to a large bowl and add the parsley, thyme, lemon zest, lemon juice, and salt. Blend the mixture well with your hands, then form it into four equal-size burgers.

- When the burgers are ready, serve them on buns topped with the fresh greens and sautéed red onion, and with a side of Thousand Island Dressing.

Tips:
- Choose fresh herbs: The fresher the herbs, the more flavorful your dressing will be. If you can, use herbs from your own garden or a local farmer's market.
- Use a variety of herbs: Don't be afraid to experiment with different herbs. Some popular choices include basil, chives, cilantro, dill, mint, oregano, parsley, rosemary, sage, and thyme.
- Chop the herbs finely: This will help the flavors to disperse evenly throughout the dressing.
- Use a good quality oil: The type of oil you use can make a big difference in the taste of your dressing. Use a flavorful oil, such as olive oil, avocado oil, or walnut oil.
- Add some acid: Acid helps to balance out the flavors of the herbs and oil. You can use vinegar, lemon juice, or lime juice.
- Season to taste: Once you've combined all of the ingredients, taste the dressing and adjust the seasonings as needed. Add more salt, pepper, or acid until the dressing is to your liking.
Conclusion:
Herb dressings are a versatile and delicious way to add flavor to your salads, vegetables, and other dishes. They're easy to make and can be customized to your own taste preferences. With so many different herbs to choose from, the possibilities are endless. So next time you're looking for a way to dress up your food, try making a herb dressing. You won't be disappointed.
