Arista (Tuscan Herb-Infused Roast Pork) - from the

This is one of the best pork dishes I make. It has never failed to please (except the one time I drank too much vino and forgot to pull it from the oven...but that's another story! The flavors are really tremendous! If you need a bigger dish, double it to an 8 lb roast, just be sure to double the herb mixture! I always serve it with white beans cooked in tomatoes/garlic and sage....yummy!

Tips:

  • Choose the right cut of pork: For this recipe, a pork loin roast is recommended. It's a lean and flavorful cut that will cook evenly.
  • Use a flavorful herb rub: The herb rub is what gives this dish its Tuscan flavor. Be generous with the herbs and spices, and make sure to massage them into the pork so that they adhere.
  • Roast the pork uncovered: Roasting the pork uncovered will help to create a crispy, golden-brown crust.
  • Use a meat thermometer: The best way to ensure that the pork is cooked to perfection is to use a meat thermometer. The internal temperature of the pork should reach 145°F (63°C).
  • Let the pork rest before slicing: Allow the pork to rest for at least 10 minutes before slicing. This will help the juices to redistribute throughout the meat, resulting in a more tender and flavorful roast.
