1 stick butter, softened
1 (8 ounce) package cream cheese, softened
2 tablespoons grated Parmesan cheese
2 cloves garlic, minced
1 ½ teaspoons dried oregano
1 teaspoon dried parsley
¼ teaspoon dried thyme
¼ teaspoon dried dill weed
¼ teaspoon dried basil
¼ teaspoon ground black pepper

Steps:

  • Mix together the butter, cream cheese, Parmesan cheese, garlic, oregano, parsley, thyme, dill, basil, and pepper in a bowl until evenly combined. Chill in refrigerator overnight or 8 hours. This can be frozen for long-term storage.

1/4 teaspoon fresh lemon juice
1/8 teaspoon table salt
Pinch of cayenne, or to taste
1/2 medium seedless cucumber (usually plastic-wrapped)
3 medium radishes
Coarse sea salt for sprinkling
Special equipment: a Japanese Benriner* or other adjustable-blade slicer
Garnish: tiny fresh mint leaves and finely grated fresh lemon zest

Steps:

  • Stir together cream cheese, herbs, zest, lemon juice, table salt, and cayenne.
  • Slice 32 (1/8-inch-thick) rounds from cucumber with slicer. Trim bottoms from radishes, then slice into 32 (1/16-inch-thick) rounds with slicer. Top each cucumber slice with a radish slice and 1/2 teaspoon herbed cream cheese. Sprinkle with coarse sea salt and serve immediately.

1 (1 lb) package frozen puff pastry
1 (8 ounce) package cream cheese, softened
1/2 teaspoon mixed herbs
1/4 teaspoon seasoning salt
hot pepper sauce, just a few drops (optional)
1/2 cup sliced green pepper

Steps:

  • Thaw pastry sheets at room temperature for about 20 minutes before unfolding.
  • Place each rectangle on lightly floured board and cut out about 2 1/2 inch rounds with biscuit cutter.
  • Prick rounds with a fork and bake on an ungreased baking sheet at 350F for 18-20 minutes; cool.
  • While the puffs are baking, beat together the cream cheese, herbs, seasoned salt and hot pepper sauce until well combined.
  • When the pastry rounds are cool, slit through the middle but do not cut all the way through.
  • Spread the inside of the pastries with the cream cheese mix and sprinkle with green pepper.

1/4 cup chopped chives, or half chives and half fresh basil or dill
1/2 teaspoon garlic powder
1/2 teaspoon dried dill
1/4 teaspoon kosher salt
1 to 2 tablespoons Greek yogurt or sour cream or 1/2 tablespoon milk, to soften (optional)

Steps:

  • Make sure the cream cheese is softened. Leave it out at room temperature for 1 hour, or place it on a plate in the microwave, cook 5 seconds, flip over the block of cheese and cook another 5 seconds. (If it's not room temperature at this point, cook another few seconds, but air on the conservative side.)
  • Chop the herbs. Mix everything together in a bowl, adding a little Greek yogurt, milk or sour cream 1 tablespoon at a time if you'd like a fluffier, more spreadable texture (we used 1 tablespoon Greek yogurt).
  • Make whipped cream cheese by adding 1/2 tablespoon milk and whipping the cream cheese in a food processor or stand mixer. Then add the chopped herbs and pulse until combined.
