1 can (14.5 ounces) whole peeled plum tomatoes in juice
16 ounces clam juice
1 1/2 pounds skinless cod or halibut fillet, cut into 1 1/2-inch pieces
4 slices baguette, each 1 1/2 inches thick on the diagonal

Steps:

  • Heat broiler with rack 8 inches from heating element. Melt 2 tablespoons butter in a large ovenproof skillet over medium-high heat. Add carrots, celery, 3 tablespoons shallot, and 3 thyme sprigs; season with salt. Cook, stirring occasionally, until vegetables are golden in spots, about 5 minutes. 1 1/2 cups panko (Japanese bread crumbs)
2 tablespoons dried parsley
1 teaspoon dried dill
1/2 teaspoon dried marjoram
Vegetable oil, for pan-frying

  • Rinse fillets and pat dry. Use 3 shallow dishes to prepare your breading ingredients. In the first dish, mix the flour with 1/2 teaspoon seasoned salt or Essence and 1/4 teaspoon pepper. 1 1/2 pounds vine-ripened tomatoes (8 small to medium), sliced thin
1 small red onion, halved lengthwise and sliced thin
2 teaspoons chopped fresh rosemary leaves
2 teaspoons chopped fresh thyme leaves

Steps:

  • Preheat oven to 425°F.
  • On a lightly floured surface with a floured rolling pin roll out pastry into a rectangle roughly 17 by 15 inches and trim edges to form a 16- by 14-inch rectangle. Halve pastry lengthwise, forming two 16- by 7-inch rectangles.
  • Brush edges with water and fold in edges to form a 1/2-inch wide border on each rectangle. With tines of a fork press border to seal. Transfer rectangles to a large baking sheet.
  • Divide anchovy paste between rectangle and spread in a very thin, even layer. Sprinkle each tart evenly with 1/2 cup mozzarella and 2 tablespoons Parmesan. Arrange tomato slices in one layer on cheese. Scatter onion slices and herbs over tomatoes and sprinkle with remaining 1/4 cup Parmesan and salt and pepper to taste.

1 cup butter, softened
1 (3 ounce) package cream cheese, softened

1 egg

1 (12 ounce) jar raspberry preserves
powdered sugar, for dusting

Steps:

  • Preheat oven to 350 degrees.
  • Mix flour and baking powder.
  • Beat butter, cream cheese, sugar and egg in large bowl until light and fluffy.
