15 small red potatoes (about 2 pounds), cut in half
1/3 cup butter, cubed
1/4 cup minced fresh parsley
2 tablespoons minced chives
1-1/2 teaspoons minced fresh tarragon or 1/2 teaspoon dried tarragon
2 to 3 garlic cloves, minced
3 bacon strips, cooked and crumbled
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain well. , In a large skillet, melt butter. Add the parsley, chives, tarragon and garlic; cook and stir over low heat for 1-2 minutes. Add the potatoes, bacon, salt and pepper; toss to coat. Cook until heated through, about 5 minutes.

1 medium head garlic
½ cup low fat, low sodium chicken broth
3 potatoes, peeled and cubed
1 cup warm skim milk
2 tablespoons olive oil
1 tablespoon dried thyme
½ teaspoon dried rosemary, crushed
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Slice the top off the head of garlic to expose the cloves. Place the whole head and the broth in a small casserole dish and cover. Bake for 1 hour; remove dish from the oven and set aside.
  • Boil the cubed potatoes in water for 20 minutes or until soft. Drain. Add the warm milk and olive oil. Beat with mixer until potatoes are fluffy. Add the herbs.
  • Gently squeeze the garlic out from each of the cloves, leaving behind the skins. Add all the garlic pulp to the potatoes. Beat again and season with salt and pepper.

These are great roasted red skin potatoes. Make sure you cook them a long time until they are golden brown. Usually takes about an hour for me. For the herbs I usually use rosemary, parsley, basil, and oregano. Simply delicious!

1/4 cup olive oil
4 -6 garlic cloves
1 tablespoon dried herbs
3/4 teaspoon salt
1/4 teaspoon pepper
12 -14 red potatoes

Steps:

  • Preheat oven to 450.
  • Combine all ingredients except potatoes in food processor and pulse until well combined. You can also mince the garlic and mix everything in a small bowl but I find the food processor easier. Set aside.
  • Cut the potatoes into quarters and arrange in a 9x13 baking dish.
  • Pour mixture over potatoes and stir to coat.
  • Bake uncovered, stirring occasionally, for about 60 minutes, or until the potatoes are golden brown.

1/2 cup sour cream
1/2 teaspoon garlic powder
1 tablespoon finely chopped fresh parsley leaves

Steps:

  • Preheat oven to 400 degrees F.
  • Using a wooden spoon as a cradle, place each potato in the spoon and make several parallel slits into each potato top making sure not to slice completely through.
