Categories     main-dish

Time 45m

Yield 2 servings

Number Of Ingredients 16

8 ounces angel hair pasta
2 tablespoons olive oil
4 tablespoons salted butter
8 ounces cooked lobster knuckle and claw meat
Kosher salt and freshly ground black pepper
8 ounces beef tenderloin, cut into 1/2-inch cubes
1 tablespoon lemon pepper seasoning
1 shallot, diced small
2 cloves garlic, minced
1 tablespoon chopped fresh oregano
1 teaspoon fresh thyme leaves
Pinch red pepper flakes
1/4 cup white wine
1/4 cup heavy cream
1 lemon, zested and juiced
1/4 cup chopped fresh parsley

Steps:

  • Cook the pasta until just al dente. Drain, reserving half a cup of pasta water. Set aside.
  • Add the olive oil and 2 tablespoons of the butter to a large, heavy-bottomed skillet over medium heat. When the butter has melted and the oil is hot, add the lobster meat and sprinkle with a pinch of salt and pepper, tossing until heated through, 5 to 10 minutes. Remove to a plate.
  • Sprinkle the steak with the lemon pepper seasoning and add to the skillet. Cook, turning occasionally, until medium-rare, 2 to 3 minutes. Remove to the plate. Without cleaning the skillet, melt the remaining 2 tablespoons butter, then add the shallots, garlic, oregano, thyme and red pepper flakes. Cook, stirring, until fragrant, about 30 seconds. Deglaze with the wine, scraping the skillet to release all the flavor. Add the cream, lemon zest and pasta water, then bring to a boil and let thicken, 1 to 2 minutes.

½ teaspoon finely chopped fresh rosemary
½ teaspoon finely chopped fresh thyme

Tips:

  • Use fresh herbs: Fresh herbs provide a brighter, more intense flavor than dried herbs. If you don't have fresh herbs on hand, you can use dried herbs, but use about half the amount.
  • Don't overmix the rub: Overmixing the rub can make it tough and dry. Mix the ingredients just until they are combined.
  • Let the rub marinate for at least 30 minutes: This will give the flavors time to penetrate the meat. You can marinate the meat for up to 24 hours.
  • Cook the meat over medium heat: This will help to prevent the meat from drying out. If you're cooking the meat on a grill, cook it over indirect heat.
  • Let the meat rest before slicing: This will help the juices to redistribute throughout the meat, making it more tender and flavorful.

Conclusion:

Herbed lemon pepper rub is a versatile and flavorful rub that can be used on a variety of meats. It's perfect for grilled, roasted, or pan-fried meats. The combination of herbs, lemon zest, and peppercorns creates a bright, savory flavor that will tantalize your taste buds. Whether you're a seasoned grill master or a beginner in the kitchen, this rub is sure to become a favorite. So next time you're looking for a delicious and easy way to flavor your meat, give herbed lemon pepper rub a try.
