Time 1h15m

Yield 4 to 6 servings

Number Of Ingredients 7

1 tablespoon unsalted butter, plus 4 tablespoons unsalted butter, melted
2 pounds Yukon Gold potatoes, peeled and sliced 1/4-inch thick
1 teaspoon garlic powder
5 sprigs thyme, leaves stripped
Kosher salt and freshly ground black pepper
1 small onion, thinly sliced
Flaky sea salt

Steps:

  • Preheat the oven to 375 degrees F. Generously grease a 12-cup muffin tin with the 1 tablespoon butter.
  • Combine the potatoes, 4 tablespoons melted butter, garlic powder, thyme, 1 teaspoon kosher salt and 1/2 teaspoon black pepper in a large bowl. Gently toss the potatoes with your hands until fully coated with the butter and herbs. Layer the potatoes in the prepared muffin tin. Tuck 2 onion slices into each potato stack. Bake until the potatoes are easily pierced with a knife and the edges are golden brown, 50 to 60 minutes. Sprinkle with 1/2 teaspoon flaky sea salt and 1/2 teaspoon pepper.

Tips:

  • Use a variety of potatoes for different textures and flavors. Waxy potatoes like Red Bliss or Yukon Gold hold their shape well, while russet potatoes are more starchy and fluffy.
  • Slice the potatoes thinly and evenly so that they cook evenly. A mandoline slicer is a great tool for this.
  • Soak the potato slices in cold water for at least 30 minutes to remove excess starch. This will help them crisp up in the oven.
  • Season the potatoes generously with salt, pepper, and herbs. You can also add other spices, such as garlic powder, onion powder, or paprika.
  • Use a combination of olive oil and butter to grease the baking dish. This will help the galette get crispy on the bottom.
  • Bake the galette at a high temperature until the potatoes are tender and golden brown. This will usually take about 45 minutes.
  • Let the galette cool for a few minutes before slicing and serving. This will help it hold together.

Conclusion:

Herbed potato galette is a delicious and versatile dish that can be served as an appetizer, main course, or side dish. It's perfect for a weeknight meal or a special occasion. With its crispy crust, tender potatoes, and flavorful herbs, this galette is sure to please everyone at the table.
