GRILLED HERBED POTATOES AND SHALLOTS

Steps:
- Place potatoes in a large saucepan, and fill with enough cold water to cover them by 2 inches. Bring to a boil over high heat, and add salt. Reduce heat; simmer until potatoes are slightly tender when pierced with a fork (but not cooked through), about 10 minutes. Drain; let stand until cool enough to handle. Cut each potato in half.
- Heat grill to high. Overlap two pieces of foil, each about 3 feet long, to form a cross. Place the potatoes in one layer in center of cross. Drizzle the potatoes with 2 tablespoons oil; add the shallots and oregano; season with salt and pepper. Fold foil, enclosing the potatoes, and seal edges by crimping.
- Place foil packet on grill, and cook, shaking packet occasionally with tongs, until potatoes are cooked through and golden brown, about 20 minutes, depending on heat of grill. Remove packet from grill, carefully, watching for any steam and hot oil that might escape. Transfer potatoes to a serving bowl. Drizzle with remaining 2 tablespoons oil, and adjust seasoning as desired.

Tips:
- Choose the Right Potatoes: Use firm, waxy potatoes like Yukon Gold, Red Bliss, or New Potatoes that hold their shape well during the cooking process.
- Clean and Prep Potatoes Properly: Scrub potatoes thoroughly to remove any dirt or debris, and poke them with a fork to allow the steam to escape while cooking.
- Use Fresh Herbs: Fresh herbs offer the most flavor, so use them whenever possible. If using dried herbs, reduce the quantity by about half.
- Add Vegetables for Variety: Feel free to add other vegetables to the potato packs, such as chopped onions, bell peppers, zucchini, or mushrooms.
- Season Well: Don't be afraid to season the potato packs with salt, pepper, and other spices. You can also add a drizzle of olive oil or melted butter for extra flavor.
- Seal the Packs Properly: To prevent the potato packs from drying out, make sure to seal them tightly with aluminum foil or parchment paper.
- Adjust Cooking Time: Cooking time may vary depending on the size and type of potatoes used. Check the potatoes with a sharp knife or fork to ensure they are cooked through before serving.
Conclusion:
Herbed Potato Packs are an easy and delicious way to enjoy potatoes. They are perfect for busy weeknights, potlucks, picnics, or as a side dish for any occasion. With endless variations of herbs, vegetables, and seasonings, you can customize these potato packs to suit your taste preferences.
